To start, my chemistry is mostly forgotten  (been 30+ years since college chemistry) so talking in moles is foreign at best. If I start with DI water,in what quantities do I add what to make this water? I'm wanting to make some historic IPA. Any water recipes?

Some of my favorites are D-47,71B-1122, and EC-1118. The first two for fruit melomels, the latter for cysers (I like them dry and sparkling) and straight meads (back sweeten here).

The problem is.......I have never made a really good mead from this yeast. Have made some "really good" meads from wine yeasts, but this one has let me down majorly.

5 or 6...and it goes up dramatically...we haven't fully decided our pricing this year, but are leaning toward 1-6 = $5, 7-10 = $8, 11 and up =$12 (I wanted to take it to $15 above 6)
I don't follow the logic here. For my home club, our yearly competition is a major fund raiser, anything we did to limit entries would be detrimental to the club. Why do you penalize folks who want to enter multiple entries?

I've been using that very kettle for about 4 years now. Never had the least bit of an issue with the valve getting hot. 16 inches in diameter, clears the flam pretty good.
