General Homebrew Discussion / Re: Is this a good problem?
« on: November 07, 2012, 06:58:07 PM »
I've had this problem before too, although the "over drinkers" are the ones who usually help me out on brew day.  I think it's easy for people who aren't familiar with homebrewing to assume that the beer just materializes without investment or that it's just a free bi-product of our hobby.  I have no problem laying down the law when it comes to giant glasses.  I brewed a pumpkin beer every year for a Halloween party.  The first few years I was just excited for people to be drinking something I made so I didn't worry about collecting funds.  Two years ago I put out a jar at the kegerator with a note that said "Homebrewing isn't free.  Please contribute to the cause.".  Three hours and 15.5 gallons later, there was .35 cents in the jar.  Needless to say, I still brew my pumpkin beer every year, but only a few pints emerge for close friends and family at the party.  Although I must say, it can be flattering to have a keg of homebrew go so quickly.

Kegging and Bottling / Bottle Carbing - Round 2
« on: October 22, 2012, 10:21:31 PM »
Hey!  So I usually keg my beers and force carbonate.  Previously when I've bottled, I've used a counter pressure bottle filler.  I've started doing some smaller experimental batches where I bottle condition.  I've learned after this failed bottling that I should use my scale and measure the priming sugar by weight because my bottles aren't carbonated (but do have slight carbonation) after about 5-6 weeks.  I was curious if I should try to pop the bottles and add a bit of priming sugar, then rebottle.  Would this ruin it?  How much sugar should I add?

I disconnect my C02 bottle and purge my keg a bit before dropping my auto siphon hose to the bottom for transfer.  C02 is heavy so you should be good.  You can always purge a few times during the racking process if you're that worried about it.

I like it only because I now know where my volunteering booth is and can plan out which brewery to pour (into my mouth) for.

They are hanging me tonight - Marty Robbins

Yeah, exactly.  I usually run the primary fermentation a bit longer when using fruit.  Then I'll rack to the secondary and let it sit for another week to clear it out. I usually just keg the secondary (rather than racking over a second time), so using the fruit in the primary works best for me.  It's all about preference I suppose.

Sounds like you could definitely use some more head room but I'm sure everything should be fine.  I brew with fruit a lot.  I usually put all the fruit in the primary and let it sit for about 7-10 days depending on activity.  There's always a heap of fruit at the top with a ton of foam on top of that.  If it's still bubbling (with enough pressure to blow the plug out), keep it going!
