"Here is a comment from noted brewing water expert, AJ DeLange about the conversation he had with the chemist from Five Star Chemicals regarding their 5.2 Stabilizer product.

"Tipped a few last night with the chemist who designed this product and was able to confirm that it is indeed a mix of phosphates (mono and di basic) that accounts for the presence of the malt phosphate. This is something I have long suspected and am pleased to have finally confirmed.

Good manners prevented me from pressing him on its efficacy and suitability relative to the statement on the label but his comments on it were basically that most brewers shouldn't use it/need it and that it was put together for a particular brewery that had variable source water and no desire to make any effort to track that variability."

Please spread the word that the 5.2 product is not needed or desirable for brewing."

I've been teaching a beginning homebrew class.  Last night, one of the guys in the class told me that he had a friend that worked for a restaurant supply store who had hooked him up with a no rinse sanitizer called  "Solution QA".  The active ingredients are n-alkyl (50% C14, 40% C12, 10% C16) dimethyl benzyl ammonium chloride.  Anybody ever heard of this stuff or know anything about the ingredients?

For years, people have asked me about the braid I use in my cooler mash tun.  It seems like there are a lot of braids that don't work well, as evidenced by some of the kludges I've seen like putting a coil of wire in the braid.  I've always said that it shouldn't be necessary if you get the right braid, but I built mine so long ago that I couldn't recall what I used.  Well, I've been building mash tuns lately to document the procedure for the book and I have the answer!  What has been working perfectly for me is the Lasco brand Pro-Flex Stainless Braided faucet connector hose.  Part no. 10-0121 or 10-0321.  The only difference is the size of the compression fitting on it, and you cut that off anyway.

I just wanted to document this here so that in the future I can remember what the heck it is!

OK, brewers, I could use your help....I'm writing a section of the book about experimenting with Am. IPA.  I'm interested in blends of the newer "tropical fruit" hops with some of the more traditional varieties like Cascade, Centennial, Chinook, Amarillo, Simcoe, Columbus.  And what kind of grist you use to tie it all together.  Please let me hear your thoughts and what you've done.  The best ideas and recipes will get printed in the book and you'll get the credit for them.  Ideas, please!

Anybody used lactic acid to sour a Berliner weisse?.  It was done with a sour mash, but it's young and hasn't soured much yet.  Yeah, I know waiting would be the way to go, but how about lactic acid?

The first time Dogfish Head had some major television exposure, it was for its short-lived 2010 documentary series "Brew Masters" on the Discovery Channel. Next time, it could be the backdrop for a prime-time family sitcom on network TV with characters based on the real-life Dogfish founders, Sam and Mariah Calagione, and their two children, Sammy, 13, and Grier, 11. Fox has purchased the show, which would star its co-creator, actor Ken Marino ("Party Down," "The State"), a longtime friend of Sam Calagione who helped him paint the brewery's flagship Rehoboth Beach brewpub before it first opened.
