here is a not so pale wheat ale that i brewed and fermented with white labs 320 american hefe.....

i had to change the water bottle out about 24 hours in and it bubbled like mad....  i made a starter into a 1.060+ beer

this one is obviously fermenting, but i can't catch the first bubble....

i used two packets of safale us-05 in a 1.080+ beer.

these orange caps "click" on these better bottles and you can grab the hose and not pull them off, but if you wiggle the cap, there is some "play".

i've used this same blow off deal on three beers with no ill effects, but i've never had one not bubble when it ferments.

Extract/Partial Mash Brewing / when is the best time to add honey?

i'm rushing to brew two beers in a short amount of time (the first one i did yesterday).  i've switched to all grain, but i'm doing these extracts so i can have shorter brew days due to the fact that my wife could go into labor any day.....

i'm wanting to do an ipa brewed with honey.  i have 48oz. of fresh local honey and i'll be brewing this weekend.  is there a best time to add it in order to get some of the honey taste in the flavor profile a'la hopslam?  i'll be using safale-05 as my yeast since i don't have enough time to make a starter with liquid yeast.

i'm going to be using about 10-12 lbs of extract in the beer.

i'm brewing a couple beers for my belated 40th birthday party (sometime in august).  i'm not big on wheat beers, but my buddy had some of a wheat beer kit he wasn't using, so i grabbed it from him and i modified it to make it a pale wheat ale.  here goes....

i'll be doing a full boil.

7 lbs wheat lme
.5 lbs munich lme
2 lbs extra light dme

1 oz kent goldings @ 60
.5 oz simcoe @ 60
.25 oz hallertauer @ 60

.5 oz kent goldings @ 20
.25 oz hallerauer @ 20
.5 oz simcoe @ 20

.5 oz simcoe @ 0
.5 oz kent goldings @ 0
.5 oz hallertauer @ 0

white labs american hefeweizen yeast (w/ 1500 ml starter) wlp320

The wheat extract is a blend of 40% wheat malt and 60% 2-row barley.

The Munich extract is a blend of 40% Munich malt and 60% 2-row.

1.068 OG
51 IBU

this is going to be my "light" beer.

my other beer is going to be a double ipa brewed with maris otter and belgian pale as the base malts and ringwood ale or american ale II yeast, but i haven't worked out specifics on that one yet.  it's going to be all grain.

i have a double ipa in an oak barrel i'm wanting to bottle and keg.   

do i just add my priming sugar like normal and bottle what i want to bottle and just keg the rest?

also, this yeast says to ferment between 60-72...  would i be ok on the lower end of this?

i just got a new 7lb capacity barley crusher.

base has nifty little rubber feet for whatever it sits on.

but, whatever does it sit on?    and where does the crushed barley go (obviously on the floor with nothing underneath it)?

i've been brewing extract for the past eight or ten months.  i had upgraded my brew kettle to a 10 gallon mega-pot already and was perfectly happy for a few months. 

now i've got the itch to brew all grain so i have more control over the flavor of the beer and cut the cost of my brewing.  i ordered the 7 lb barley crusher from northern brewer as well as this....

10 gallon AGS

not a sabco i know, but i'm sure it will keep me occupied until i have the resources to upgrade again. 

i'm actually more nervous about screwing my beer up now than i was before my first extract batch....

Ingredients / williamette and nz hallertauer good hops to age for a lambic?

i have about 8 oz. of williamette and 6.5 oz nz hallertauer that i have "extra".  they are from 2008.  since i have a bunch extra, i was thinking about aging these to brew a series of lambics. 

would these be good potential candidates for the hops for the future beers?
