Ingredients / williamette and nz hallertauer good hops to age for a lambic?

i have about 8 oz. of williamette and 6.5 oz nz hallertauer that i have "extra".  they are from 2008.  since i have a bunch extra, i was thinking about aging these to brew a series of lambics. 

would these be good potential candidates for the hops for the future beers?

7.5 gallon pre boil volume.  finished just over 5 gallons.

2 oz crisp amber malt steeped at 150 for 15 minutes)
4 lbs extra light dme @ 60
3 lbs honey @ 5

.5 oz amarillo (8% pellets) @ 60
.25 oz simcoe (12.9% pellets) @ 60
.25 oz centennial (9.1% pellets) @ 60
.25 oz nz hallertauer (7% whole) @ 60

.25 oz amarillo (8% pellets) @ 5
.5 oz simcoe (12.9% pellets) @ 5

.75 oz centennial (9.1% pellets) @ 0
.75 oz nz hallertauer (7% whole) @ 0
.25 oz simcoe  (12.9% pellets) @ 0
.25 oz amarillo (8% pellets) @ 0
