Yes. Braise the sliced marinated pork-butt in lard using a large deep pan like a wok on a gas burner. Once it is tender you put high heat to it along with adding milk, sliced oranges, peppers etc. Stirring frequently you will crisp everything up and the lard and milk will become the sauce.

Since it is somewhat labor intensive many folks here will do the braise stovetop then do the "crisping" in the oven in a roasting pan. There's a world of difference between real carnitas and what is commonly sold in restaurants- which is often just diced grilled pork sautéed with green peppers, tomatoes and onions.

That looks like a good hunk of Ahi done nice and rare.

What do you do with the avocados on the grill?


i just hit them with a little olive oil and the seasoning du jour (last night it was a rub a guy sent me that he makes and another commectial rub that is heavy on the garlic and salt side.  i like a bit of sweetness to them, so i always use a sweeter rub, but i bet some spice would be nice as well.

over the weekend and last night.....  pork was on sale for .98/lb, so i bought 25 lbs.  pibil and smoked butts were in the ticket.....

if you haven't tried pibil, you should......

■5 pounds pork butt, cut into 2 inch cubes
■5 tablespoons annato seeds
■2 teaspoons cumin seeds
■1 tablespoon whole black pepper
■1/2 teaspoon whole cloves
■8 whole allspice berries
■2 habanero Peppers, fresh or dried, cleaned and minced (optional)
■1/2 cup orange juice
■1/2 cup white vinegar
■8 garlic cloves
■2 tablespoons salt
■5 lemons
■1 shot of tequila
■banana leaves (optional)
Preparation Instructions
Grind the annato seeds, cumin seeds, whole peppercorns, whole cloves, and whole allspice in a mortar and pestle, molcajete y tejolote, spice grinder or coffe grinder.

Blend the cleaned and chopped habanero peppers with the orange juice, vinegar, garlic and salt.

Mix the dry spices with the liquid.

Add the juice of 5 lemons and a nice splash of tequila.

Place the cubed pork butt in a large zip lock bag and add the marinade. Soak 4-6 hours, in refrigerator, turning several times.

Line (8x13) baking pan with banana leaves. Pour in pork along with the marinade. Cover with Banana leaves and seal the pan with foil. Bake in a 325 F degree oven for 4 hours.

This is embarrassing...

The Mississippi homebrew bill passed the House this morning!  It now goes to the Governor to sign into law.

thanks for all your work with bill and craig and the rest of the ryp crew.

phish, frank zappa, miles davis, loungy house music.....much of it depends on my mood.  i'll often name the beers after the music i listen to while brewing.

well, it looks like we are finally going to be able to legally brew bere in mississippi.....

both of these beers turned out great.  the first beer is exceptionally good.
