update on this beer....  it sat in primary for about a month and then "lagered" another month...  (i had an unfinished keg i put in the keezer and dropped the temp down to 42 degrees and the beer sat in there.)  after i emptied the keg (this week), i racked this beer into the keg.  i pulled off a sample.  it tastes fairly light with a moderate hoppiness.  this should be a pretty good "drinking" beer to have around the next couple months. 

after it carbonates and i start drinking it, i'll update the thread with a more specific review of it.

i brewing a black ipa this weekend (hopefully).  iirc, stone 11th/sublimely self righteous is a black ipa and a wonderful brew.  i can't wait to brew one myself.  it will be my first all grain venture.

i've only kegged a couple times, but i usually set the pressure to about 12 and shake it three or four times a day for three or four days.  after a couple days it's carbonated enough for me to drink and after that i drop the pressure to about 6 or 8 until i empty the keg.

thanks for the advice guys.  i will cut back on those specialty malts.  probably by at least half and then add maybe four ounces of de-bittered black for color?

i'm using the following recipe....   (may modify it a bit...)

5 gallon batch

12 lbs Maris Otter
1 lb Crystal 60L
1 lb Carafa Special



1.5 oz Amarillo  - 75 min
1 oz Simcoe  - 60 min
.5 oz Amarillo - 20 min
.5 oz Amarillo - flameout
.5 oz Simcoe - flameout
1 oz Amarillo - dry hop


probably ferment on the us-05 or the american ale.

if i'm feeling crazy, i might put it in an american oak barrel for a couple weeks before i keg it.


i'm open to suggestions of course.

i have a couple of the small 5.25 gallon oak barrels...  i was told when they are empty, to fill them with 5 gallons of distilled water and 5 campden tablets. 

whisky of your choice also works if you can rememeber to rotate the barrel to keep it from drying out on the inside.

The "coffee in the secondary" approach that Keith mentioned is often referred to as "dry beaning".  I do that for aroma and add coffee to the finished beer for flavor.

i'm glad you said that, because that is what i was thinking about doing, but wasn't sure if it would be overboard.
