Maybe Spalt and NB hops just aren't that popular where I live. Maybe I will just stick to US " C " hops and Hallertauer, Saaz etc.

I ordered some Spalt and GR Northern Brewer hops and the lot no. said 2015 and 2016. What gives? Do homebrewers not rate newer hops or is it simply " first in and first out " LHBS practice. I would like 2017 hops please.

I am thinking on buying some Perle hops in bulk. I will be brewing Pilsners only with them. How do they compare to other German hops? I can't find a lot of reviews on these hops. They certainly have been around for a long time.

My Helles tastes way better with Weyermann Pils malt than 2 row. I just found the taste had a more of a Pilsner taste than when I used 2 row. However, it is still good when I zip it up a bit with specialty malts.

My 2nd stepping up with my WLP810 lager yeast foamed over last night. I used some no-foam to finally get it to go away. I have never had a foam over with DME. This was in a 5 L flask too.

I just tossed it in the fridge to settle and step it up again for my lager. I couldn't believe how fast it started to work, within 2 hours. Very light compared to DME. It was done in just over 24 hrs. which is fast compared to DME. I did make 2.5 gallons and put the left over wort in a santized container in the fridge for around 3 days until I use it to step up my WLP810.

I just ordered some stuff online and assumed our local Brew Your Own would have some DME. They no longer sell supplies of anything. Yea, a city of 75,000 and not one place that sells DME. I am using my wort right away and not freezing it.

I can't find any DME in my city, so I am thinking on making a yeast starter from 2-row. Can I use well water and don't worry about my PH? I don't have a PH meter. Or do what I do when I make beer, Bru'n Water, RO water with brewing salts.

I have 13 gallons of IPA on tap at the moment. Done for awhile. Now it is time to brew lagers until late summer. Then it is time to brew, well you guessed it.

curtdogg, my water profile is the same as yours. I don't plan on changing it either. I personally like slightly more specialty malts in this style of beer to mellow out the high hop bitterness. I use honey malt, munich and biscuit, not all in the same recipe though.

I don't own a PH meter and don't plan on getting one. I use Bru'n Water and am happy with the results so far.

My problem is we don't have one. The nearest store is 2 hours away and my favourite store is 3 hours away. Online only :(
