My ESB went south last December. I really wanted it for Christmas. My last one was back in 2012. Stunk my basement up when I dumped it for hours. Whew!! I seem to get a bad one every 5 years or so.

I boiled my yeast starter in my 1 L flask on my stove many years ago. I didn't let it cool down enough before I added it to the sink with ice cubes. It cracked in the sink and that was the end of that flask and the yeast. I only boil in ss pots now.

I carb with CO2 @ 5 psi for a few days and then push with Nitro at around 22 - 25 psi. I used to just use Nitro for a few days @ 30 psi but the nitro tank emptied too fast. This seems to work out okay.

I don't like sour or brett beers at all. I am still an old school brewer ( since 1979 ). I only brew stouts, porters, bitters, etc. I live in Canada and 12 packs of Craft beer are around $26.00. Six packs are around $14.00. That is the #1 reason I homebrew. #2 is I love to brew beer.

I have an un-opened 500 g brick of Maruibrew 514, best before says June 2014. I plan on doing some higher gravity one gallon brews after Christmas. Kind of nervous about using it, I got it for free though. I am thinking on using double the amount I would normally use for a 1.080 triple. Should I rehydrate it first?

I use Barkeepers Friend and either a white or blue scrubbie on my elements and that seems to work fine. However, clean it on brew day, not a week later like I did, way more scrubbing.

I have a box of 15 year old BYO magazines. I will probably give them away to a new homebrewer. Even though they are a bit dated, the recipes are still sound in my opinion. In fact, I still brew the same recipes. I guess I am old school/stubborn old fart.

I live in Canada and I think it is just the opposite. Our economy isn't that great at the moment and everything is expensive, especially beer. Good craft beer goes for around $14.00 a six pack, mega s*** for around $11. I brew to save money and the savings are incredible compared to store bought. There is so much beginner equipment out there to get you started, so what's stopping you? Even if you happen to have a job and are busy working, you can make great beer on a simple system which I bought in 1980 and still use in my kitchen occasionally.

I have always wondered about oxidation when adding gelatin to my kegs, but I just add it as slowly as I can. I purge it right away with C02 though.

Must be nice to get fresh yeast. I can only buy yeast online and the freshest one I ever got was 3 weeks old. That was once in 10 years. The average time is at least 60 days and I received one that was over 90 days old. I guess living in Canada is the reason. White Labs should build a lab in Toronto.

I set my alarm at 4 am. I try to get the mash going before my wife gets up at 5:30 to go to work. After that, time means nothing. Never brew on a weekend though.

Since I brew a lot of Pilsners, I do get a lot of info to make better lagers from the German site. I did read some of the arguments, but didn't get involved. They take their brewing seriously for sure.
