All Grain Brewing / Step Mashing? Important?

So I am building my system and have a question.

Step Mashing?  Is it important for certain type of beers or malts?  Is it not important any more since the malts used today are better than in the past.

All Grain Brewing / HERMS vs RIMS

Building an all grain system.  Already have the three kegs bought for and a friend is going to cut openings in the top. 

But I am struggling with going with either HERMS or RIMS.  I would love honest feedback.

Equipment and Software / 201 or 304 Stainless Steel

So I found a large stock pot that I can convert to a brew kettle since a buddy of mine can weld stainless steel.  But it is 201 stainless and not 304 like most kettles I see for sale.

Is there a big difference?  I know price to buy is about half.

Yes I have the bug!  I want to go all grain but with so many different set-ups I am confused.

Pots or Keggles?
March or Chuggar pumps?

What misc. piece of equipment did you wish you had when you first went all grain but didn't know about till later?

Any help is appreciated!

Extract/Partial Mash Brewing / First Christmas Beer - Got questions!

So I am brewing my first Christmas/Strong Ale Beer.   Really feel challenged to do well with this.  I was thinking of placing cinnamon sticks, nutmeg and cloves in secondary.  Any challenges with this?  Here is my first draft of my beer.

12 lbs Amber Extract
2.25 lbs of Crystal 80
1/2lbs of Black Patent Malt
1/2 lbs of Chocolate Malt
1 lb of Flaked Wheat

1lb Dark Belgium Candi Sugar

1 oz Cascade Hops
1oz Northern Brewer Hops

Belgium Strong Ale Yeast

Thoughts????
