All Grain Brewing / Topping off wort

I brew 5 gallon batches, full boil, in an 8-gallon BK.  I like IPA's and typically have a small boil over no matter how hard I try not to.  Also, the last two batches I did a 75 minute and a 90 minute boil and boiled off a ton of wort.  When that happens, I usually top off before I pitch my yeast with filtered water.  However, I had someone notice a sour taste in my most recent IPA (I didn't taste it due to the hops, but he claimed he did).  So I'm wondering if it may have been from the filtered water.  I have it in a Brita pitcher, so the pitcher and the water haven't been sanitized.  I'm wondering if it got an infection from this.  I noticed some people add water to the boil if too much is lost, which makes since unless you're worried about hop utilization.  I'm not really worried about that at this point.  I've only brewed 7 batches.  Any ideas?

Yeast and Fermentation / Ringwood Ale Yeast (1187) Trouble...?

Brewed a DFH India Brown Ale Clone..ish yesterday.  First time using the Wyeast Ringwood Ale Yeast strain.  Briefly perusing the boards and noticed this yeast may be a bit finicky.  It's been in the fermentor 24 hrs now and there's NO action.  Not what I'm used to obviously as most of my beers I've been using US-05 (or Wyeast equivalent).  Temp in the fermenting chamber was about 66F last night (it got down to about 46F outside).  I figured it would be a few degrees warmer in the carboy, so that should be fine, right?  Do I have a stalled ferment, should I warm it up, rouse the yeast, or just be patient?  BTW,this is about my 7th batch of homebrew, so I'm not a master, nor have I experienced very many issues yet  ;D

All Grain Brewing / Fly Sparging Question

I recently made NB's Oatmeal Stout (AG).  I just kegged it last Friday (7 days ago).  Here's the bill:

6.5 lbs English Maris Otter
1 lb Flaked Oats
0.5 lb English Roasted Barley
0.5 lb English Chocolate Malt
0.5 lb English Dark Crystal
1 oz. Glacier (60 min)
Safale S-04 Ale Yeast

I broke my thermometer when taking the OG, so my original temp correction for the OG was a guess...Here's what I got:

OG: 1.044
FG: 1.013
ABV: 4.04 %

I am making this for my dad-in-law who was coming in town on short notice (tonight).  Primary for 13 days then cold crashed for 2.  Force carbed at 20 psi and agitated.  Lowered pressure to ~12 psi.

So I just tasted it and it tastes sharp(?). Maybe slightly watery...

My original thoughts are related to the thread subject.  When I was lautering/sparging, I had my HLT rate going faster than my MLT was going out, so before I knew it I had too much water in the MLT.  Could this be the reason for the low OG/ABV and the watery mouthfeel?

I have heard that stouts do better and mellow out after they condition in the keg for some time.  This is my first stout. 

Any suggestions/comments?
