Beer Recipes / Split batch D-180 and Cane sugar
« on: August 03, 2011, 06:16:40 PM »
On Denny's recommendation I bought two pounds of D-180 from Candi Syrup, Inc.
I am thinking of making ten gallons of wort with all pils malt to a gravity of 1.070 and pitching 1388 into each five gallon fermenter.  After they both get a nice start I want to add the D-180 to half and the same amount of cane sugar to the other half.
I made a nice Tripel this way at the end of last year.
Will the D-180 darken the other half enough or add enough dark fruit/malt flavors to make it taste like a Double?

The Pub / bad day resolution
« on: May 11, 2011, 06:41:37 PM »
Back on April 6, as you may remember, I was given a citation for "driving with an improper tag" which I was told by the officer was a felony misdemeanor.  Turns out it is a 2nd degree misdemeanor and I had my court date yesterday.
My sister-in-law, a judge in N.C., recommended I dress well because she's always impressed by people showing respect, so I wore a coat and tie.  I was the best dressed person at traffic court yesterday, with the possible exception of the translator.  The whole room was filled with people wearing t-shirts and baggy blue-jeans.
They had about 100 people in the courtroom, but the judge announced that they were going to go through 261 cases in the afternoon.  So, starting pretty promptly at 1:45, they did all the cases that required interpreters first.  Mostly driving without a license, but there were a couple leaving the scene of an accident and dui's.  One kid was handcuffed and sent to jail.
After the Spanish iteration of traffic court, my turn came up, I plead guilty and got a chance to explain my situation briefly, showed that I had obtained the proper documentation and I was out of there with court costs.  $265.

It's a whole 'nother world out there.  Takes a real hit to your relative self worth.

All Things Food / What beer with Thai food?
« on: April 21, 2011, 05:26:57 PM »
A friend of mine co-owns a Thai restaurant and is planning on expanding.  He has asked me to recommend some beers that would both complement the food and sell well.  He will have the usual Thai and oriental beers plus the macro/lite beers on hand in bottles.
What styles of beer would you chose to go with Thai food?

General Homebrew Discussion / Loan Program for Start Up Breweries

This article about a Boston Lager philanthropic project is pretty interesting.  Sam Adams is "giving back" to the beer community in a pretty appropriate way, by making some money and expertise available to start-up breweries.

Yeast and Fermentation / Show us your pellicle
« on: January 20, 2011, 01:59:22 PM »

This is a beer that stopped fermenting with ale yeast at about 1.032, so I decided to add Brett Brux to it.  The pellicle developed within a couple weeks and looks really thick now.  Smells great too.

I inherited this circa 1934 GE Monitor Top refrigeration machine.  Works great.  The hard part was getting it from Cincinnati to Tampa.

I seem to be having technical difficulties loading the pictures.....

Ingredients / Home-Smoked Malt
« on: July 12, 2010, 05:39:48 AM »
I smoked three bags of malt yesterday and made my entire neighborhood smell great.  The box has enough trays to hold about 50 pounds of malt when full.  The fire is far enough away that the smoke is pretty cool when it gets to the box.
