an open bowl works well also. I can't wait to be discussing roasting profiles for my Kona, Just after the first crack, the half way between the first and second crack, just my opinion, Cool to roast your own

BBQ and smoking is so intriguing. however as a vegetarian I can't justify buyng a smoker or anything unless...

What are some non-meat things y'all bbq or smoke?

I've smoked tofu before. It was pretty tasty. I like to "brine" or soak the tofu in soy sauce or some other salty solution for 30 minutes or an hour then throw it in the weber to smoke at 250 for an hour or 2. Get's nice a firm and tastes great.

good call, I love smoked tofu coated with chopped pistachios and grilled briefly. sliced on salad with olives and egg salda nicouce.. nicoise... whatever, you get the idea. damn french (the language not the country).

I would try hard boiled eggs and cheese, If you are lacto ovo inclined. If you want to go to the darkside find some grass feed beef and pork,maybe open pastured poultry. The thing you got to ask yourself is the genetically modified soy better than grass feed animal?  I would follow my conscience.

That all said grow your own what ever that be, eat close to the ground, know what you eat and know your food provider.

After 12 years of being vegitarian(my wife was a veg for 25 years), and health concerns, we went with what we could grow. Alot of hard work but worth it, you are responsible for the life on your charge and take. I think it is your choice of what you can get or grow.

I would suggest everyone to investigate the pastured beef,pork,chicken and other polutry. 

Not saying to go to Walmart the worst you can do.

What you using for chicken? my favorite is old hen. She is most likely to be the best, not the fast grow big breasted monster. I like a old leghorn, she maybe 2 years old but plenty of flesh for pot pie or NOODLE (a nood to my wifes ex) soup. Can't find it grow you own and enjoy the eggs you get beforehand. I'll sell you real old hen chicken also.

If you are going into this as an intern or paid help. A word of caution is check your ego at the door. Do what you are told and keep your mouth shut. I've know some great brewers, only to be shut out because of the know it all attitude.  Do yourself a favor and hold your opinions until you have your own brewery. So long story short shut the mouth and open the ears. You are there to learn and earn (somtimes) to start your own brewery.

make a chicken stew in a 9x12 and top with some pie pastry, or get some thing from the refrigerated isle at your grocery. Frozen pie dough works well. Pilsbury has the best except for sratch!

Best stock is from America's Test Kitchen recipe fast and easy, all you need is chicken backs,legs, onions and some bay leaves done in 2 hours tops. Better than soaking a carcass for hours. Cut that carcass in pieces and use it to replace the backs , but don't forget to get the feet.

Sounds like we got ya, I hope you enjoy the coffee that you roasted. Roasting consistantly with a popper takes alot of effort. good one ya!

Food trucks and serving local breweries best beers along with your beer is what you maybe banking on.  A tap room should not compete with the local bars, you are selling kegs to them (if a package brewery) . Close early and hand out drink chips. I never knew you could get NG Belgian Red on tap until I went to a friends brewery and tap room.

Ever try that?

One thing is being willing to go with less than desirable equipment, live on craigs list. Sucks but you got to do what you got to do. I picked up 2 400 gallon dairy tanks for less than 1k, yes they are not conicals but You got to start somewhere. If they don't work as fermentors I'm sure I can add some ss screen and have extra mash tuns or sell them to other start ups.

Be resourceful.
