Yeast and Fermentation / Cool rehydrated yeast prior to pitching?

I usually use liquid yeast so this is process is new to me.  Both How to Brew and the Fermentis website say to rehydrate in warm water (95-100F in HtB, 77-84F for ale and 69-77F for lager on Fermentis).  Okay, got that.  Both sources say wait 30 min then pitch.  So the question is, do I pitch the still warm yeast into a much cooler wort?  If I just pitch as is, it's going experience a roughly 30F drop in temp.  Will this not shock the yeast and cause more harm than good?  Or, should I wait the prescribed 30 minutes then cool the yeast down closer to the temp of the wort?

A friend just gave me a love controller that they had no use for.  The only problem is I'm a little illiterate when it comes to wiring diagrams (and I think they are as well, hence the free controller).  Can anyone out there help with where to put put what wire?  To me it looks like the black wire goes to post 4 and the white to post 5 and that's about as far as I get.

Kegging and Bottling / Pellicle or mold in the bottle!?

I usually keg, but 6 months ago I bottled a Flanders Red.  I went to put one in the fridge today in anticipation of a nice sour beer and noticed some floaters.  This doesn't seem normal, but since I've only ever kegged sours this may have happened on all my batches and I would never have noticed.  Any words of wisdom/caution?

Equipment and Software / Help with mash tun size

I'm in the process of setting up a HERMs system and need help determine what size mash tun would be best.  I'm looking at a kettle that is either 12.75 (10-15 Gal) or 15.75 inches (20 Gal) in diameter.  I like to brew both 5 and 10 gallon batches so I'll be using any where from 8 lbs of grain on up.  I'm not sure how to calculate what the grain bed depth would be. I'm concerned that if I go with the larger kettle I will have problems with some smaller beers, or if I go with a smaller kettle bigger beers will be an issue.  Any help/suggestions is greatly appreciated!
