Is it possible to make a no rinse sterilizing solution using bleach and water if the proper percentages are mixed?  If so, what are they?

From time to time I use C-Brite to sanitize.  There are always a few teaspoons left in the bottom of the carboy after dumping the solution despite trying to get it all out.  Today there were only a few minutes left to cool my wort completely.  In that down time, I pitched the yeast into the fermentor.  As I looked at it, I wondered if that little bit of solution would have an effect on the yeast being in direct contact.  The yeast was out of the package no starter solution to dilute the yeast. 

For the most part I pitch into the wort.  Was trying to maximize time I guess.  Any harm done?

I have always made a starter with White Labs stepping it up at least twice.  I have a small brew window and need to brew this Sunday. What are your thoughts on a direct pitch from the package into a wort with a gravity of 1.045 - 1.050?  If that's not advisable i would have time to put it on a stir plate for about 20 hours and pitching even if it is at high krausen. Thoughts?

Bought a package of WLP 011 about two weeks ago.  Went to put it in a starter today and as I squeezed the package up and down to mix it, it started to squirt out of the package.  Upon closer examination, I saw that the top of the package was split open.  Safe to use, or toss it?

Exactly what flavor do fresh figs add to a brew. I've used them in spiced holiday ales and perhaps can't pinpoint a specific flavor because of the spice. If added to an American ale for example what character would they add.

Caramelizing fresh figs.  Can you run that process by me one more time.  Can't seem to find my notes from last year.  These are added to secondary correct?

I've been brewing this style for a few years and have never been able to get that creamy silky mouth feel.  I've tried a thin  mash at higher temperatures, adding carapils, flaked oats or barley and still never got to the point where I was satisfied.  Any secrets out there that I am missing?  I should also mention that I bottle and don't keg.

I really don't use dry yeast all that much.  This year I did.  I made four batches with US-05 and every single one was over carbonated.  When I noticed this on the first batch I reduced my priming sugar from 3 oz. of cane sugar to 2 oz. and still over carbonated.  No sign of infection on the neck of the bottle or off taste.  Is this typical with this strain.  I cracked the caps on all the bottles and now they seem fine.

This sound familiar to anyone?

General Homebrew Discussion / Fat Tire

All the hype behind bringing this ale to the east coast I was really expecting something terrific.  Just had my first. Very disappointing. Literally no taste. I'm looking for malt. None. Trying to detect hops. None. Is it just me?  Opinions.   Reminds me of the time they brought Coors east back in the early 70's. Same reaction on my part.

Middle of my mash  7* Vienna, 3* Flaked corn, 1* L. Munich.  After 60 minutes at 150 degrees and 10 minutes at 168 degrees, still coming up black on the iodine test.  Tasted wort and it's sweet.  Any quick opinions.  Gotta move forward on this.
