I don't know if this matters or not, so I'll ask:

When recirculating through an electric RIMS tube, does the direction of flow matter?  i.e. should the wort flow from the sensor side to the heating element side, or is the reverse true?

Or does it matter at all?

Yeast and Fermentation / a different lagering question

I'm doing my first lager, it is still fermenting and I haven't done a diacetyl rest yet.  When it comes to lagering, my plan was to transfer into a corney keg.

My question is, can I carbonate while it is in the lagering phase?  Or should I wait until lagering is complete before I hook up the CO2?

Ingredients / Over did it with coriander

I used a bit too much coriander with my Belgian Wit, and I'm looking to add something to tone it down.  My wife suggested pear, I was thinking about adding kiwi.

Any other thoughts or suggestions?

I know that the common wisdom know is not to rack to a secondary.  Up to this point, I've only brewed ales and this method has worked out well for me.

Does anyone rack a lager to a secondary before lagering?

I've brewed an IPA a couple of times using Centennial for bittering and Cascade for aroma.  I want to try something different.

What are your favorite hop combinations for an IPA?

All Grain Brewing / Water to Grist Ratio

I've been doing some searching on-line and haven't found an adequate answer to this question:

Is there a chart/table that outlines water to grist ratios for the different styles of beer?

I've read a lot about people's personal preferences for the ratios, and that people sometimes experience a higher efficiency with a thinner mash.

I'm asking because I'm rebrewing a witbier this weekend and I would like to use a thinner mash than my usual 1.25qts/lb, but I don't know how high I should go.  I have the capability to do a 2qts/lb with my 10 gal Blichmann Boilermaker MLT and a 10 pound grain bill.

All Grain Brewing / Dry Hopping

Let me start by saying, "I've never dry hopped before". 

My AIPA is about 80% done with attenuation according to the hydrometer.  There is still a layer of krausen riding on top of the beer. 

Should I wait until the krausen falls?  Or should I just drop the pellets in and give it a good stir?

Equipment and Software / Stout Tanks vs. Blichmann

I apologize in advance if this has already been discussed.

Has anyone had experience in comparing a Stout Tanks conical fermenter and a Blichmann conical?  There seems to be a very large difference in price.  I understand that the Stout Tanks have welds, and the Blichmanns don't.  Are there any advantages/disadvantages of one over the other?

I've read in a few places that brewers start their fermentation "cool" and then allow it warm up over the next few days of fermentation.  Does this mean that they start it at the lowest end of the recommended fermentation temperature for the specific yeast and then allow it to rise?  My other questions are: when to start the rise in temp, over how many days, and at what temp range do they stop?

This weekend I'm going to try using whole leaf hops for the first time.  I have a bazooka screen in my boil kettle, do I need to worry about the screen getting clogged?  Should I use a hop bag?

General Homebrew Discussion / maintaining temps in freezer

I have a Frigidaire Stand up freezer that I intend to use for fermentation and lagering.  I bought a Johnson Controls A419 Temp controller to control the freezer compressor.

My problem is that right now, and for the next month or so, the average temps in the garage are below 50F and the internal temp of the freezer hovers around 50 while it is unplugged.

My question is, can I just put a lamp inside to warm it up and then let the temp controller regulate the temp?  I'm thinking about a 25W bulb, but do I need a 50W or 60W?  It is a 19 cu ft freezer if that helps.
