General Homebrew Discussion / Ageing different styles of beer.

I don't age any beer on purpose, but some times a bottle gets lost in the back of my fridge.

I was very pleased with how the flavor on my chocolate porter aged after three months. However anytime I open an IPA that is three months old I am not really happy with how it tastes.

Is there any reason why some beers age better than others?

My brothers co-worker, who doesn't brew, let me pick his Cascade hops plant today and I got a pound of them. He was disappointed I didn't take more, but I only brew once a month. I put them in the freezer to prevent oxidation.

What I am wondering is, what do I do with a pound of fresh hops?

-How long will they stay fresh.
-I want to use them in one batch, but think I might be a bit over zealous.
-Will cascade hops be ok on their own, or should I pair them with another hop.
-Should I have picked more.

And a side question. What made me itch from picking hops. Think its the alpha acids, but it could just be the vines.

The Pub / Budweiser Isn't what it used to be...?

My dad asked me to see if anyone remembers the change, and if they know why it changed.

He told me that long before I was drinking beer, or alive. Budweiser had a very distinct flavor, that set it apart from other beers. At some point they changed the formula and it lost it's individuality.

Does anyone know what happened.

I just thought of this! Does anyone have a recipe that would mimic or clone that old Bud. That would be a batch he would love to help me brew.

 So I brewed on Saturday. Everything went smoothly, but than Sunday came and it hit 94*. I didn't think much about it, my closet has always been cool enough for fermentation. I failed the carbometter went of the scale, above 80*. I moved the beer to an ice batch and it's sitting at 68*.

My question is should I call it a wash a dump the wort out, or try repitching. The only other time I had to repitch the beer was contaminated.

The Tumwater Washington brewery, home of Olympia beer. Is being allowed to brew beer again, only 90 some odd years short of the original ban.

I don't know if this is relevant to a lot of you out there. But it is a big victory for people in my area, who have been wondering what will become of the building. ;D

This last spring my house got infested with sugar ants. I am dealing with them, but that's not the point of the thread. The point is, I keep my home brew system so clean I have yet to find a single ant interested in my beer.

Does anyone else have small or large victories, that they would like to pat themselves on the back for?

OK maybe not over hop, but get a beer that is more bitter than something I can buy in a store.

Can I get some suggestions on strains, quantity, and timing of additions of hop pellets for this? I also don't know if different strains of yeast effect the bitterness of my brew.

I am very impressed with Bridgeport's variety pack. Most include wheat beers and pilseners witch are two types of beer I don't personally enjoy. But Bridgeport put out one that is right on for me.

comes with three of each of these.

King pin double red
India Pale Ale "catchy name ???"
Hop Cvar IIPA
Smooth Ryed Ale

My beer of choice for brewing and buying is an IPA so two kinds in the variety pack was great to see, and it was nice to drink the other two to get out of my comfort zone.

What do you look for in a variety pack?

Random thing I found out brewing last night, my cat's hat hops.

Decided after a couple home brews to see what my pets thought of hop pellets. One sniff of a pellet and they would turn and run. I thought it was awfully funny.

Does anyone else know any random facts about pets and brewing?

I want to substitute chocolate for some or all of the corn sugar in my porter. Any suggestions on the amount of chocolate and the kind of chocolate I should use?

1lb black malt
1lb crystal malt
6lbs Dark DME
1lb corn sugar
2oz galena Hop pellets 13.2% Bittering
2oz Belma Hop pelets 11.3% Flavoring
1 Tsp Gypsum and Irish moss
American Ale Wyeast.

Any feed back would be great.
