Any recommendations for a good, affordable submersion wort chiller?

DIY?

50' coil of either 1/2 or 3/4 ID copper tubing
2 compression fittings with appropriate attachments for your water source.

If you can get the precoiled copper that's really all there is to it. at some point I wrapped some copper wire to hold the whole thing together so it didn't spread out so much when I picked it up but other than that I have used mine for a couple years now. 11 gallons boiling to ~80 in summer in < 30 minutes

Do you think a 1/2 or 3/8 tubbing is better? 3/8 is always more expensive and was unsure why.

What do you guys think of the Coleman xtreme marine 70 quart cooler?  I seem to be finding better deals on that one right now and is supposed to be (at least according to Coleman and some reviewers) a higher quality cooler than the Coleman xtreme.

Yeast and Fermentation / Fermentation Accident

We are brewed a Belgian double last week. We did not realize that the gravity was high enough that we would need a different airlock set up. Needless to say, it fermented rapidly and on the third day the lid blew off. We got it cleaned up and the beer seemed to be bubbling away and happy in there. Is there anything we need to do to make sure it is not contaminated etc?

We currently have the standard bottle capper that comes with most brewing kits. Do any of you have any suggestions for another type? Ours works fine but would kind of like one that is a little faster...

Is it possible that the honey in the beer allows it to keep carbonating? Every brew we have had do this has contained honey.

We have found that after our beer has been bottled for several months that it has a very large head on it when we pour. It doesn't matter how slow we pour or how angled the glass is - it foams up like crazy. Are we doing something wrong or does this happen often with natural carbonation?

My husband and I have been brewing on our electric stove and we find that it is so inconsistent and takes so long. I was looking in to buying a Bayou Classic SP10 High-Pressure Outdoor Gas Cooker, Propane.
Any thoughts or suggestions?

All Grain Brewing / Switching to All Grain

Hello,
 My husband and I are pretty new to home brewing. We have used kits previously with liquid malt extracts but I wold like to try switching to all grain method. Do any of you have any suggestions for the first route we should take? Methods? Recipes? Suggestion?
