There was a guy here in OR who opened a brewery after hitting the lottery.  In a few years, he was broke....

It's location, location, location not to mention the facts that one must be able to wear many hats. Did I also say that one must make great beer.  ;D

I also need to bag my whole hops as not to clog up in my system, but pellet hops can be boiled loose. I prefer whole hops over pellet hops. Not too sure if there is any significant difference between the two, but I believe whole hops are less oxidized due to processing of pellets.

I use a  58qt rectangular cooler and I've done many 5 gallon batches getting 75-80% efficiency and pretty good clarity. I've even made Pilsners that were fairly clear into the primary with my set-up. As long as your making beers in the 1.040ish and up, you should have good results with a 70 quart extreme.

I currently use a rectangular cooler and it's easier to dough-in with my mash paddle as I can break up the dough balls against the flat wall.

Hey guys.  It's been a while since I've chimed in, so I thought I'd post some photos of what I was up to in the kitchen yesterday.

Potato sopes with goat cheese, salsa verde, cilantro, and a squeeze of lime

Puerco verde tacos with homemade tortillas, refried beans with crumbled cotija cheese, and a vienna lager to wash it down

Looks and sounds tasty. I haven't tried these yet. Looks like a nice appetizer.

I like most of their beers. I really like Hop Devil. I am going to the brewpub tomorrow to meet up with my guitar player. He hosts an open jam on Monday nights. Anyway, I am planning to try some of their beers on tap. I wonder how the averall quality will differ from their bottled beer.

I just tried this beer for the first time today and it was good. The Noble German hop flavor is pretty good, but I think it's missing that spicy element that is typically found in that particular variety. I give it a "real nice try" and enjoyed it but not a "German" Pils by any means.

Check out this fine East Coast band out of Athens, Georgia. It's considered Southern Country and Alt-country with a "three axe attack".
