All Things Food / Pot Smokin

Hey you guys, havent been brewing in a while and I am giving up the drink for a while. Been hanging out over at The BBQ Brethren.

I miss you guys and I will still stop in from time to time if that is OK, I still work on brew equipment so that is a tie in, right?

I have been doing some pot smokin though. Its great wen it is too cold and snowy outside.

You have to try it, it works great.

I devised a real simple way to smoke in a pot right on the stove top. It works great and there is no visible smoke in the house. Only what I would call a pleasent smell of smoke that lingers a little. No more than a fireplace delivers.

Have Pot Will Smoke.  ;)

Equipment and Software / Counter top brewery.

Some of you guys have giant brew set ups. Some of them I have worked on.

Even five gallons is big for me, so I got to thinking. How bout going small? After all its not size that matters, its what you do with it that counts.

Im thinking counter top brewery. Something that I can brew enough beer to fill four or five liter ez cap bottles. Maybe some sort of electric kettle and a two gallon cooler?

There are those electric kettles for tea water but they might need to be modified so the thermostat does not turn it off as soon as it boils.

Or even better some thing that is made up of two kettles one with an electric heat source for the boil and the second with a warmer for the mash tun.

A slick looking stainless steel counter top brewery would be fun!

Im more into the process and the experimenting then I am into having large quantities of beer on hand.

The Pub / The Walking Dead

Anyone watching the walking dead marathon?  What a great show.I dont watch TV much but I gave this show a shot cause Im such a zombie fan. At first I thought here goes another zombie thing that will suck. Its been done to death. But this show is good.

I hope it lasts cause Im sure it has a big budget with the make up effects and all.

It comes from a popular comic book fo the same name.











All previous five episodes are on AMC today leading up to the new episode at 10pm.

I like that the zombies are half slow and half fast, sort of in between. I like where the story is going too.

Awesome show.

The Pub / Airport Security

What is up with these protests? What do people want? I just dont get it. When the planes are hijacked everyone points the finger at lackadaisical security. Now that they are trying to raise security people complain? Am I missing something? I understand if you dont want to get x-ray but why protest a pat down?

Are Americans stupid or what?

Go to Europe, they pat you down at random, and no one complains. In England you have to face a gauntlet of questions before they let you on a plane. Isnt this the way it should be if we are going to prevent trouble?

It should be a strip search, I say pat em down, all of em. And if you dont want to be patted down then you should forfeit what you paid for your ticket and be removed from the airport.

Other Fermentables / Kombucha

I got a kombucha scoby coming from the farm where I get raw milk. Strange I know, they must be farming this stuff. I found it strange cause they are Mennonite. Not sure if they are into that stuff, or they are just filling a demand.

Im gonna start some up right away. Just wondering if anyone else has fermented tea in this way. What do people think of all the health claims? I am happy with kefir, it definitely makes me feel good. In the morning with some fruit it gives me instant feel good energy. I think this is because it is extremely high in vitamins. Ill tell ya, its my "energy" drink and it works. no BS.

Im wondering if homemade kombucha will offer the same good stuff. Some of the claims are pretty grand like it may be the cure  for cancer.

Im just hoping it is refreshing,fun to make and at least a little healthy.

Im also interested in the ginger beer plant and its similarities to the Manchurian mushroom.

Whats your dessert specialty? Anybody else bake? Winter is coming and with more time for indoor activities now is the time to do it. Nothing like staying home with the family and baking an apple pie.

Here is my famous peach cobbler. Works great when peaches have flavor but are not very juicy.

What makes my peach cobbler unique is that I use semolina flour instead of regular flour. I also use maple syrup instead of brown sugar.

This one bakes up relatively easy and it is a crowd pleaser.

Other Fermentables / Cider with Spontanious Fermentation.

Gone apple picking with the family this week. Hay ride, gonna get some pumpkins too.

Gonna grab four or five gallons of fresh pressed cider. I have three  five gallon batches in the basement now.Haven t had any of those yet but I figure I will be bottling one that is just about three years old this season. Next year the next batch down there will be three years old, etc.  If I keep it going we will have one nicely aged cider for every year.

Im thinking of trying a wild spontaneous fermentation with this batch. Anybody ever try that?

My first experience with hard cider was when I was about 11, we discovered a jug that had "turned" but my brother and I drankit anyway. It was also my first experience with intoxication. We drank a lot of it. I think I almost pooped my pants a little that night. I dont know, maybe I really did poop my pants and I "blacked" it out.

Ever just come up with a cool dish? I know everything has been done to death but...
 
Today planned on making chicken parm. but came home to find no bread crumbs or bread.

Looked around and found a bag of pretzels. Threw them into the food processor and made some pretzel crumbs.



Then made a chicken stock gravy with lots of Dijon mustard and beer.



Real good stuff, no foolin!!

For the cutlets: hammer them kinda thin. Then flour-egg wash - pretzel crumbs and fry in about a half inch of oil.

For the gravy: Start with melted butter over a med flame, place in a few tablespoons of flour and make a roux. Then add chicken stock, lots of good mustard, beer, marjoram, salt and pepper.

If you have egg wash left over throw it into your potatoes while they are still very hot. Whip em on in there they will cook in the hot potatoes and make them creamy.

Equipment and Software / Grain Mills

Whats a good brand of budget grain mills?

Just out of curiosity how would you crush grains if you didnt have a grain mill? Guess it would be kind of hard to do with mortar and pestle. I was thinking of the grain mill attachment for my kitchen aid but that would grind it to flour I think.

Well, got some receivables coming in this coming week. Think Im gonna splurge on some brew gear.

Everyone send in their form?

I did it right away which I think was last year. I have since been through three (3), thirty (30) min. plus interviews on the phone. All three were to clarify things that I had clearly filled out on the form. I thought it was crazy the amount of my time that they were taking, basically a thirty min call that should take about ten mins.

As if that isnt a PITA enough, three weeks ago a woman started coming by. Wants to come in the house and conduct a 40 min interview. I siad OK and she came in. She pulls out the regular form that we filled out last year. I explained that I did already fill out the form. She said that she has no information on that and would like to fill it out again. I replied "NO" I dont want myself or my family to be counted twice, and we did our part already. She tried to continue and I asked her to leave.

I called the Census bureaus field office and told them the situation. Gave them my phone number and told them to look up my info cause I will not go through another interview.

Now, there is another more aggressive man coming by, stops here two or three times a day stacking up the little notices you put on the door. He was just here and I didnt answer the door.

Im being harassed and Im really annoyed and angry.  >:(

Anybody ever go to see one of these things? I went to one that they have every year by my house. It was my first time seeing it but I have listened to it for five years now.

Its really cool,I was so impressed by the authenticity. It was very real. These guys work hard at this hobby makes brewing look like a walk in the park.

Anyways, got some good pics. Enjoy.






























Really cool. And a real dedication.

I watched that last fall dead, he laid there for at least an hour and he didn't move once. I walked off, he may have stayed that way for much longer.
