Ingredients / How many brett vials per barrel do ya think?

I'm aging some a big, dark belgian in cabernet bbls and want to add brett b. Was thinking about 3 or 4 vials per bbl. What do you guys think? The bbl size is 60 gallons.

Had a crazy week last week because it was "Beer Week" in Huntsville. Going to have to give my liver a serious detox next week. But, we topped off the week at Yellhammer Tasting room with our 3 year anniversary party! Hard to believe it's been three years. Great time, good crowd!

Anyway, thought I'd brag a little. :)

My cousin in Tampa is interested in opening a Beer and Win bar. He emailed me and was asking about license options and from the looks of it you guys down there can't sell beer on premiss to be consumed at over 6.243% ABV -

Can anyone shed any light on this for me? Is that really the case?

I've done some lettuce and cabbage a few times. What else goes great in a fall garden? Carrots and radishes? Any spices that grow good in fall? Any tips?

Ingredients / Hungarian Oak ... smoky?

I know for a fact I've used Hungarian oak before. But, gosh, it's been a  while. Seems like I had been steered away from it for some reason. But then a local master wine maker gave me a glass of some red wine (sorry, the specific style is lost on me) and it had this really nice mildly smoky undertone. He said it was from the Hungarian oak. It kind of reminded me of some mildly smoky/oaky Norwegian sour beers I had enjoyed recently.

I guess if you charred the wood enough it would give some smoke character, but does anyone have any info on this sort of thing?
