All Things Food / Avocados
« on: April 07, 2013, 05:58:13 AM »
I can get a bag of avocados at Costco on the dirt cheap, I think you get 6 or 7 for $3 or so. Problem is they are rock hard when I get them and I never can get through the whole bag before I have to throw them away. And it's tricky trying to plan dinners when you never exactly know when even a single avocado from the store is ripe.

And one know any tricks on quick ripening or storage of avocados?

Yeast and Fermentation / US-05 - pretty amazing stuff
« on: March 14, 2013, 06:43:56 AM »
I use US-05 on my IIPA sometimes, I like the results. Well, I pitched and aerated and I took off for a few days and came back to see that the auto valve on glycol unit failed and left the valve open and had crashed the beer to 45 degrees. And the US-05, while albeit slowly, was steadily fermenting.

Got it ramped up and fermenting away nicely now but pretty amazed that it would ferment at those temps. The yeast was rehydrated (see, Tom ;) ) in about 95 degree water and I'm not exactly sure how long the lag was, but it was fermenting 2 days later at 45 degrees after pitch.

I have purposely fermented US-05 at around 54 degrees with good results before. But shocked to see it chugging along this cold. I seen some lager yeasts that struggle under 48.

The Pub / Why does Budweiser just not get it?
« on: January 11, 2013, 09:28:18 AM »
Reading about this "Bud Black Crown" that they are releasing - and I'm thinking "wow, they are really going to launch a flavorful lager type beer".

Then I am reading the most recent issue of "Beer Advocate" and see that the beer they are going to release as "Black Crown" is the beer that scored worse out of the "Project 12" pack (Batch No. 91406) It got a 69 and comments like "near cloying sweetness" and "misplaced carmel note".

I honestly haven't had the beer yet but I'm not expecting much with that score.

We all always say that we don't like Bud products but we respect the prowess of their brewing skills - so why can they not seem to make a truly great beer? I know most of it is marketing but I wonder how much of it is also just lack of understanding on how the beer scene is changing? Newspapers are failing (or have failed) across the country for the same types of reasons.

General Homebrew Discussion / Soapy off flavor
« on: January 10, 2013, 08:08:59 AM »
My last 2 IPAs have both had a soapy off flavor. I realize that this can be caused by autolysis but I don't think this is the case. The only thing different I did in these last 2 recipes was swap our cascades for centennial since I was out. The cascades weren't super fresh but they smelled fine.

Anyone have any ideas?

The Pub / PC help - dern wifi won't work
« on: January 02, 2013, 10:27:22 AM »
Have had nothing but problems with the HP laptop since I got it. Not the wifi suddenly is not working. Looked at troule shooting guide, followed all steps. Nothing.

I'm a Mac guy so I can usually solve issues on macs no problem but I'm not sure if I am missing something here or what. Any suggestions?

Commercial Beer Reviews / Duvell adn Duvel Singl
« on: November 17, 2012, 05:16:07 PM »
About once every 2 or three weeks I stop and get a 4 pack of Duvel. Just love that beer. Easy drinking, lemon like refreshing hop character, dry enough to make it a thirst quencher even at 8.5% ABV and a rocky head unparalleled by just about any other beer. It's become my answer to "pilsner drinking" in some ways.

Really wish we could get the Duvel single in bottles, I really love that beer as well and order it on draft at my local.

Just thought I sing the praises of a well done and often under appreciated beer.
