Ingredients / Lemongrass
« on: February 07, 2017, 12:08:18 AM »
I bought a few shoots today. I have never used it. I have a kolsch that is finished and wanted to add lemon grass to it. I was hoping to just add it to a corvy with a surescreen on dip tube. Do you guys think this will be ready in a few days? How much should I use?

I'm asking because I need to have it done by Friday. ;)

General Homebrew Discussion / Message to the forum. from me.
« on: January 29, 2017, 11:52:18 PM »
I didn't want to pollute the LODO discussion any more. But I wanted to respond to this.
I just went and read the same thread you must have looked at and think you most certainly are no seeing what I am seeing. What would you have me, as a mod, do differently? Please PM with any suggestions. Thanks.

In addition, rather than locking down threads like "Boil temp - do they matter?" because you/mods don't like the direction their headed. Prune them; clean out the garbage (or split it off if it's constructive conversation that's just off topic); let the original thread proceed.

Thanks! I will strive to do better and your constructive criticism is very much appreciated. That said, please understand that we mods are simply doing what we feel is best to the health of this forum.  None of us are getting a power trip from this. We only do this because we love the art of brewing. And we deeply care about this community. Even the people who are angry at us (me) right now. Bryan (who is a long time invisible friend who I followed for many years because of his excellent brewing knowledge) and Derek.

I will strive to do better as a mod. And I appreciate the support of folks and welcome any criticism on my methods of moderating. I offered my resignation if that is necessary but Denny and Hoosier both threatened to fly down here and beat my ass.

Equipment and Software / who filters?
« on: January 24, 2017, 01:05:35 PM »
We recently got a centrifuge at YHB and I am super excited about the clarity of our beer. I want to start filtering my 5 gallons batches. Anyone have any recommendation? Suggestions? Hints and tips?

The Pub / Songs you never want to hear again.
« on: January 19, 2017, 06:29:18 PM »
Thinking about songs you used to like or songs from bands you still like that you could go forever and a wek without hearing. Here are some from me. Not in any particular order

American Pie
Hotel California
Pour Some Sugar on Me (literally would rather pour molten hot lead in my ears)
Bohemian Rhapsody
Reelin' in the Years
Stairway to Heaven
Any Aerosmith song ......

Equipment and Software / Picobrew Zymatic

I've been having a lot of fun playing with this. It is not without its drawback but it can do some very complex step mashes. If you are scared of HSA this is not the system for you although I have been looking at some mods to cut down on the splashing.

The Pub / Espresso machines

Who has a great recommendation on Espresso machines? I owned a cheap Delongi for several years that made a decent shot. Looking maybe at this one on Amazon

Beer Recipes / Honey dew melon Kölsch
« on: May 06, 2016, 11:54:14 AM »
Thought I'd share this with you guys. I took my standard Kölsch recipe, and puréed an entire honey dew melon in a Food processor. Added it to carboy along with an oz of Huell Melon hops and aged/fermented it for about a month. Really nice, subtle melon character that I found extremely summery and drinkable.

Ingredients / Weyrman floor malted Pilsner
« on: May 03, 2016, 12:19:17 PM »
Going to brew a Helles with this today. I know, I really should be brewing a Pilsner but I have my heart set on a Helles. Will repost on my findings as day progresses. Recipe is 95% floor malted pils and 5% floor malted Munich.

The Pub / Home sound system
« on: April 24, 2016, 04:58:44 PM »
When I was 16 my dad helped me get financing for a Techniques sound system. I had a part time job and it was a great way to build credit and have a sound system that was really awesome! I loved that stereo. Over the years I've had to replace the CD player, receiver and turn table but the digital EQ and speakers are still with me, echoing back 30 blessed years of memories (and hearing loss).

What I have now is pretty nice, the sound is good but not world class. Some vinyl/CDs sound better than others and I realize that it's good but not great.

I really want to build a GREAT sound system. I have been looking at receivers and want to build something around a really great receiver but I am having trouble finding any reliable information. My budget us probably between 1500 and 3000 dollars spent here and there.

One of my very close fiends is actually the tour manager for Hank Williams Jr so at some point in time I will be asking him to assist but I was wondering if anyone here had any direction - I know denny probably knows all about this stuff. But for crying out loud I can't find much info on line. Amazon is no help. The reviews on everything are so mixed it is ridiculous. I need good advice from folks who actually know what they are talking about.

Yeast and Fermentation / Munich Dry Wheat Beer Yeast
« on: March 02, 2016, 04:19:41 PM »
I have been charged to brew a banana fosters beer for a beer dinner. How much isoamyl acetate does the dry Munich Wheat throw? More banana the better in this case!

(PS: I don't need liquid strain suggestion so much, I need to do this quickly and I have access to this yeast today. Thanks.)

All Things Food / Smokers: electric vs gas
« on: January 27, 2016, 01:10:03 PM »
I've been wanting a BGE or Komodo for several years now but every time I go to pick one up the price gets in my way. I have always used a bullet type smoker but often times I end up having to finish a pork butt off in the oven in doors and I really just want an easier way to manage my smoke days.

I'm not looking at the Traeger tyope either, but the gas and electric smokers look pretty nice with shoots or drawers you can pull out to add chunks or chips.

A buddy of mine has a gas fired one and he loves it but I was leaning electric so that I could not have to fool around with gas tanks.

Anyone have any experience with these? Preferences? Thanks!
