There is fixin' to be a local brewery around here that I am planning to go visit, but it will be the first one and they will be draft only to start. Otherwise, the best beer you are getting at the package store is Negro Modelo.

I also brought a keg of my Belgian White and a homebrew I made spiced with ginger, honey and lemon peel in a corny keg.

I unload the mash by hand (it really sucks in the high heat of summer) but it doesn't take too long. A farmer comes and picks up our grain so it never sits around longer than 24 hours. That particular batch was a 1.070 IPA. I have brewed 10 bbl batches of 1.090 beer that fit nicely in my MT but at 15 bbls that was definitely the limit of our MT (actually, it was 14 bbls - I was filling both our 7 bbl fermenters at once.)

We have an agitator but it spins too fast (need to get it slowed down) so I dough in by hand with a canoe paddle.

I've had grain stay fresh for two years rolled up in sack and stored in loosely sealed containers. I'd look elsewhere for your flavor problems.

Now where near as easy to clean as an IC (rinse and drop in boil last 20 minutes). And it clogs way too easy as well. That said, the plate chiller I have for my 10 bbl brewery hooked up to my glycol unit works far better than my old IC. ;) But my plate chiller is completely "disassemable"  (I don't really know if that's a word) and you get some pretty nasty build up in the things that doesn't come out no matter how long you back flush.

I honestly didn't care for my plate chiller. Too hard to sanitize and clean. And the plate chiller won't chill your wort cooler than your summer ground water temp.

IC is my suggestion. Stress free sanitization. Hose off, drop in boil last 20 minutes. WP  with a spoon or pump and you can get down to 80-90 degrees pretty quickly during hot summer month. Drop in temp controlled fridge or freezer or give ice water bath to drop  to pitching temps.

Wow. You guys must all cook bacon on high, too. ;) No need to have the flame up so high that you need a 20 gallon klettle for a 10 gallon batch. The spray bottle is a good suggestion, though.

One thing to consider about bulk againg and commercial breweries: Unless storing in BBLs it is difficult for most commercial breweries to seriously bulk age a beer. One only has a finite # of conditioning tanks and to keep one of those filled for much longer than 2-4 weeks seriously cuts into the bottom line.

If you are careful you can bring the wort to a boil literally an inch from the surface and not have a boil over. You don't have to have the flame turned up full blast all the way through the boil - a gentle boil is all you need.
