Meh, I only ended up drinking about a pint and a half. I suddenly remembered it was Tuesday and I had to take my son to cub scouts. Nap.was nice though.  ;)

Oh man... just when I was really enjoying our antagonistic forum positions, you had to bring Scouts into it.
I have great respect for a parent who allows their son to be a part of Scouting.  If it works for your son, there is not much that is better. I highly recommend becoming a Scout leader.  It's even better than being a Scout.

Tuesday nights are when we meet too.

As a firm believer in the K.I.S.S. philosophy.  I suggest "weazish."

I was Senior Patrol leader in troop 60 in Shiremanstown PA. We met Monday nights.  ;) was only one merit badge and my eagle project away from getting my eagle. I so regret not doing that. But I had a reputation as a partier to uphold and didn't want my name in the paper.  ::) So stupid, kids are.

I'll probably volunteer as an assistant leader when he is in Boy Scouts. But I'm going to kick back for the cub scout years. I have too much on my plate right now as it is.

When you walk in and find your 100 lb tank of Co2 is empty the day after you put it on you get pretty good at finding leaks.  ;)

I carbonate my beers by putting pressure on the keg and then turning the gas off, repeat as necessary until it is carbonated.  I do it this way because I have leaks in my system that I have still been unable to track down. 

Amateur.  ;) Come on man. It's not hard to track down the leaks. Maybe you need to rebuild your regulator. Or stop hand tightening your connections. Or find that one missing white nylon washer.

Saison de Noel is our first annual Christmas release. This is a high
gravity black saison laced with subtle Christmas spices. Belgian spice
is prominent in the nose along with notes of chocolate and espresso.
The pallet is smooth with hints of dark, tart fruits blended with
semi-sweet chocolates and finishes with mellow roast character and
alcoholic warmth. Available December 22nd. ABV 9.8%

I prefer Best to Wyermann. I don't think it is the malt. Sounds like a yeast smell to me if you think of it as "bready".

Someone mentioned autolysis. That is a possibility.

Shipping our Saison de Noel today. It's a little under carbbed so I am having to pull a quarter pint out of each one and force carbonate. I can't drink all this beer by myself. But darnit I'm gonna give it a shot.

Yeah, but what I am saying is that perhaps he started out at 2 vol co2 but his regulator gauge is faulty and as the head space increases the co2 pick up increases as well and the flavor changes "over a matter of days". Just a guess.

Harsh bitterness is what I think of from aspirin. I have definitely had unpleasant bitterness from both my alt and IPA when co2 levels got too high.

I asked about this in a post a while back. I tried cara red with a fair amount of carafa II huskless at the beginning of the sparge. I ended up making the final beer using Cara Amber which was a bit darker than the cara red and carafa special II huskless. I got a wonderfully dark red color. I'll try and get a sample soon and post a picture.

More head space definitely increases the speed of the carbonation of the beer, as long as it is under constant pressure. If you have a half filled bright tank and you hit it with 15 psi your beer will be carbonated in much less time than if you only have a half inch of head space. Try it sometime for yourself.

A quicker experiment you can try. Take full keg of flat beer with minimal head space and force carb by shaking at 30 psi. Not take a half full keg and try the same thing for the same amount of time. You will quickly see which one carbs up faster.

In the case of the OP, if his regulator is off (say it reads 8 but is actually closer to 18) then as the keg is being emptied he may notice that it gets more carbonated. Not saying this is the case, just a possibility.

Head space most definitely accelerates carbonation, which could increase as the keg was emptied. Probably not an issue at 8 psi though. Unless your regulator guarge is way off.
