10# honey/3.5 gal of water should yield a sg of around 1.092-1.100 off the top of my head.  I don't trust the refractometer calcs on FG, so take a hydrometer reading.  Your high finishing gravity could be from low pitch rate, fermenting too low for yeast strain, lack of nutrients.  Champagne yeast is noted for stripping out the must.  Start with the hydrometer, then report back.

Here's what I use from one of the brewers that used to work there.  This is what the master brewer allowed him to release.  Also gave the stats on Celebration.

Malts:
Pale 2-row: 92%
Caramel (60L): 8%
Mash at 155 F
Original Gravity: 13.0 Plato
Ending Gravity: 2.8 Plato
ABV: 5.4% (bottle conditioning will get you to 5.6%)
Hops
0 min: Perle
45 min: Cascade
90 min: Cascade

90 min: Whirlpool
IBU: 38

Yeast: SNBCo Ale (California Ale Yeast)

Gave ratios since everyone has varying efficiency.

Yes, have heard this in commercial brewing, but the time vorlaufing did not come into play.  Put the total time more like 35-45 min.

I didn't pay attention to the Bud commercial since I was brewing a crisp, clean Kolsch during the game so I can party with my friends.

I agree, death knell for "Bud" .

But did you brew it "The Hard Way"...?  (from a control room?)   ;D

No, but am working on an electric system so Bud can make an offer to buy me out. 8)

Wouldn't some phosphoric acid added to the water help?

BTW, campden tabs good for chloraimine too.

The more I think about this the deeper the rabbit hole gets...
Things I would like to add to the cost of a pint:

Grain
Hops
Water
Yeast
Finings
Man hours
Brewing equipment, a % of the total cost until the equipment has paid for itself
fermentation equipment, ferm chamber, carboys, and such
Yeast management and propagation equipment
DIY projects for the brewery
Kegs
Growlers
Bottles

see i keep getting deeper and deeper...lol

Tim

You forgot time spent on internet beer forums :)

Devil's Backbone has the brewery, but stop at the Brewpub.  Great food & has a larger beer selection.

Get a copy of the recent BREW Your Own magazine.  Look at the flow schematics.  You can get an idea where to put the 3-way valves. and to set up the single runs.
