Too bad I didn't know you were in the area.  HHB brewer used to be in our club.  Would like to hear your detailed comments on his beers.  (PM please).

New opening is Southern Barrel this Friday.  Brewer has solid background.  Test batches are real good.

Hope that you went to Moon River.  Home of the Savannah Brewers League.  Also, hope you stopped at Service Brewing.  Owner is a good friend, and I was the one to get him into homebrewing.

10# honey/3.5 gal of water should yield a sg of around 1.092-1.100 off the top of my head.  I don't trust the refractometer calcs on FG, so take a hydrometer reading.  Your high finishing gravity could be from low pitch rate, fermenting too low for yeast strain, lack of nutrients.  Champagne yeast is noted for stripping out the must.  Start with the hydrometer, then report back.

Here's what I use from one of the brewers that used to work there.  This is what the master brewer allowed him to release.  Also gave the stats on Celebration.

Pale 2-row: 92%
Caramel (60L): 8%
Mash at 155 F
Original Gravity: 13.0 Plato
Ending Gravity: 2.8 Plato
ABV: 5.4% (bottle conditioning will get you to 5.6%)
0 min: Perle
45 min: Cascade
90 min: Cascade

90 min: Whirlpool
IBU: 38

Yeast: SNBCo Ale (California Ale Yeast)

Gave ratios since everyone has varying efficiency.

Yes, have heard this in commercial brewing, but the time vorlaufing did not come into play.  Put the total time more like 35-45 min.

I didn't pay attention to the Bud commercial since I was brewing a crisp, clean Kolsch during the game so I can party with my friends.

But did you brew it "The Hard Way"...?  (from a control room?)   ;D

No, but am working on an electric system so Bud can make an offer to buy me out. 8)
