Once it is done, I may try doing some cheese if I can get it cool enough.  Bought a big chunk each of gouda and aged cheddar to try with some cherry wood.
Let me know how the cheese turns out . . . I'll probably do some this week, my ProQ was here when I got back from Portland.

Speaking of the ProQ, I was a bit annoyed - they include a votive candle for starting it, which seems nice except it was a super cheap candle.  It was broken and crumbled, the wick had fallen out, crumbs of wax were ALL over the ProQ, and I sliced my finger on some rough edges when trying to brush the bits off.  In the end I just put the thing on the grill and cranked it up to about 500F for 15 minutes or so to burn off the wax.

Has anyone used one for hotter smoking, like 225F?  I figure you can just have it running in the box while your heat comes from another source.

It will generally become less bitter over time, but once it is chilled and carbonated the perception of bitterness may increase.

If you're sure it's much too light on the bitterness, you can always brew a hop tea and dose the beer to add bitterness.

If it's got a good seal it should keep for longer than a day.  I've kept them for weeks with no problems.

The CO2 will stay dissolved in the cold beer better so it could just look like it's less carbonated, but if it's completely flat I think it is more likely that the cold bottles you tested just had a bad seal and were never carbonated in the first place.  I would check some others.

I used 2 stacked 2x4s and the hinges didn't reach.  So I got some tie plates from home depot, you can find them near the joist hangers.  Like this:

The holes in the plate lined up well enough with the holes left from the hinges, so I used the plates to hold the collar to the freezer, then attached the hinges to the collar.  I can post a pick Sunday if that is confusing.

Too funny euge!  I just found 6 Old Sol and 6 Old Wooly.  Both from Big Time, last years wooly and this year's sol.  It's fun to find stuff when you "lose" it in storage.

I haven't ordered from hopstoyou yet, still going through what I have in my freezer.  Someone else probably has.  It would be nice if they posted the harvest year, some sites do.

With the news that astronomers have for the first time found a planet outside of our solar system that may be able to support life, I think it's time to brew a beer.  They're calling it Goldilocks, since it's in the habitable zone around the star and is neither too warm nor too cold.  The star is Gliese 581, the planet is G.

So, since they're calling it Goldilocks I'm thinking a Belgian Strong Golden Ale.  Maybe with some spices, maybe not.  I'm tempted to throw some bugs in it as well, since it's all about various lifeforms :)

What do you guys think?  What would you brew?
