I disconnected it from the tank and now it reads 0 psi.

My regulator keeps going up to 35 to 40 psi.   :-[  I have tried letting all the pressure off of the kegs and lowering the pressure all the way, but it keeps creeping up there.  Any ideas?

So it was really three weeks as i look at my notes. I started at 70 and let it ramp up from there.  it was wyeast 3711

I am ready to bottle a Saison and the gravity is 1.002 and crystal clear. 

Should I add any yeast when I bottle?

Boil Volume: 6.5 gallons
Boil Time: 60 minutes
OG: 1.065
FG: 1.016
ABV: 6.5%
Color: 9.4 SRM
IBU: 75.1

12.5 lbs. Pale Malt(US) 2.0 SRM
0.63 lb. Crystal Malt - 80L
0.50 Munich Malt (9.0 SRM)
0.50 Wheat Malt (2.0 SRM)
1.60 oz. Simcoe (12.4%) 60 minutes
2.00 oz. Amarillo Gold (7.2%) 15 minutes
1.00 oz. Chinook (13%) 0 minutes
2.00 oz. Chinook (13%) Dry Hop
1.00 tsp. Irish Moss 15 minutes
1 Pkg. American Ale (Wyeast Labs #1056)

Single Infusion Mash at 152 degrees F

This should get you close.  Though I think they use Chinook, simcoe, goldings, and cascade for the hops

11 pounds of 2-row
2 pounds of c-45
1.5 oz of Amarillo 60min
1 oz of cascade 30min
1oz of cascade 5min

1oz of amarillo dry hop
1oz of cascade dry hop
