Yeast and Fermentation / how long on the yeast cake

Im doing a ipa and started my dry hopping at day 10. 9 day dry hop regime. Wondering how long I can leave the beer on the yeast cake before I need to worry about off flavors from the yeast.

Equipment and Software / up-size regulator on propane burner

Im thinking of trying larger 10 gal batches of beer. I have the dark star burner from northern brewer and was wondering if its possible to just swap out the regulator to a 10 psi to get more output from this burner?

I am resarching a new boil kettle and am wondering if i better off with a skinny tall or wide short? I have searched the forum but cant find anything on this, although im sure its been discussed. Im looking at 15 or 20 gallon pot and now i do BIAB but am considering changing my system up. I have never heard anyone say i regret buying such a large kettle!!!

I just wanted to give northern brewer a nod to the excellent customer service i received today. I bought this burner last may and have noticed a lot of soot on the bottom of my pot. I knew it wasn't right but it works and is rather efficient but decided to email northern and share this with them. Not only did they respond to my email within 15 minutes but also admitted they had some issues with some of those burners and verified my info and told me the replacement should be at my doorstep on Wednesday. That is excellent customer service and service like that goes a long way in my book.

I brew via biab and battle heat loss when mashing with my alum kettle. I am wondering am i better off going to a keg conversion or just build a mash tun? Would stainless hold the heat better?

How many of you take PH readings when making mead? I have only made 3 batches so far but would like to make more and advance my recipes. What is the preferred method test strips or an electric meter?

Equipment and Software / scorched alum pot

My burner leaves the bottom of my pot black every time i brew. It the dark star burner northern brewer sells.
I mess with the venturi device but the flame doesn't seem to change at all. Is this the result of a cheap burner or will this happen with any burner? Anything I can do to prevent this? Thanks,

I purchased some hops on sale this week i felt the pricing was pretty good. Ive bought here once before just different hops. Never used Chinook, Nugget or Willamette but i thought at these prices i would at least give them a shot. Any recommendations or opinions on those three?

Other Fermentables / mead at 4 weeks

Whipped up a batch of straight mead with orange blossom and water and did the staggered nutrient thing.  4 weeks in the wife and I wanted to taste it and WOW!!! Im ready to bottle this thing it tastes great now-I dont want to make a sparkling mead so is their any harm in bottling now?

I have made a deal with a guy on craigslist for two wide mouth 6.5 gal glass fermenters (20 bucks ea). I realized this morning looking at the add that they have purple (ish) lids. He said they were new but has anyone seen these being sold with purple lids? I only see white lids. Just wondering where these are from? Anyone have any reviews on these seems like a good idea to me from a cleaning standpoint. Link

Yeast and Fermentation / odd fermintation

Brewed a batch yesterday of an ale. I wanted to pitch on top of a partial slurry left from my last batch (same beer) because it was a limited release wyeast west coast ale. I split the slurry canned 1/2 and repitched the rest. 6 hours after pitching a little action in the bubbler this morning i go down and an 1-1/2" of foam from the yeast could be seen all the way around the sides from fermintation last night but the bubbler is not active at all. Im not used to seeing anything like this. I forgot to take an og but this is my house beer so i know where it started out at (1.050 +/-). Should i consider primary done? Thanks

I have seen recipes posted which will state say crystal 60L or caramel 60L. Are these manufacturer specific?

I started buying hops by the pound. Looking for  storage ideas. I have a vacuum sealer but to do all those 1 oz packs seems a little much. Can I just throw them in a mason jar in the freezer door? Im not storing anything for more than 6 months tops.

Kegging and Bottling / b0ttle cap issues

Anyone have issues with the bottle caper not sealing the bottles properly? Ive noticed some of the bottle caps when installing get hung up when i lift the lever arms up and try to release the capper. If i look at some of the caps some will have the aprin not completely pushed down like most. I think this isnt a good seal i cant imagine i wore out the capper already ive only been brewing since may and i bought the steel double armed one not a cheap plastic one. Also I but the o2 caps but but them in sanitizing solution for a few min before capping am i defeating the porpouse by doing this?
