Equipment and Software / Speidel Braumeister - I did it

After thorough research, I decided to bite the bullet and get myself a Braumeister. No, I'm not rich and I don't take such purchases lightly. In this case, it was partly justified by my upcoming 40th birthday. I call it my Midlife Crisis Kettle.

Other factors in my decision:
1. I needed new equipment anyway. I've been brewing with an electric kettle that became unreliable.

2. My back. Any new setup would have to minimize lifting. The costs are rising.

I read through the whole dang thing. One reoccurring comment among long-time brewers is, "I wish I would've bought one sooner."

One complaint is often that one is limited to low-ish gravity beers. Those complainers are just not being creative. I could still do a traditional mash with my old gear and use the kettle just for the boil. Or I could do a double mash (mash, remove grains, mash again with wort and new grains). Anyway, I decided that it's not important to me since I've only done one "big" beer in the last 7 years.

I also received some financial aid, which helped. I was generously given a loan which I may be able to pay back in liquid.

So, happy birthday to me!! I'll be brewing my first batch this weekend.

I often see resin used as a flavor descriptor for hops. I know the wine world uses it as well. What I'm wondering is, what's the point of reference? Bong water? How are we supposed to know what resin tastes like?

I saw a recipe for beer ice cream posted somewhere not too long ago. I thought it was here, but I can't find it. Maybe it was in Zymurgy? It involved boiling the beer down to concentrate it, adding sugar and stuff. Aldi has a cheap ice cream maker this week, so I wanted to give it a try. Does anybody have a good recipe?

A while back I posted problems with my first proper pilsner. It turns out I severely under-pitched the yeast. I went ahead with it anyway. At bottling it smelled like a banana farm. After 2 weeks in the bottles, it tasted ok if a little solventy and smelled entirely like pears. After 3+ weeks, it's actually a pretty dang good beer. It's true that beer wants to happen. I am a bit surprised, though, at how much the esters disappeared. I'm so happy I didn't give up on this one.

Yeast and Fermentation / Lager Woes

It's been 2 1/2 days since I pitched Wyeast 2000 Budvar Lager yeast into my CAP and there is still no airlock activity. I pitched at around 9.5 (celsius) and let it cool to and held steady at 9. I've given the fermenter a good shake a couple times a day to no avail. I'm now letting it warm up a couple degrees to see what happens. The smack-pack was slow to act, but there was activity. Any thoughts? Be patient? Pitch a pack of SA-05 for a light corn ale?

A couple questions about polenta…

I plan to use instant polenta in a pilsner. Do I need to boil it first or just add dry to the mash?

If I decide to do a protein rest, do I do it with or without the polenta?

Ingredients / Flaked Maize Storage

I've had a sealed bag of flaked maize for about 6 months now. I've never used the stuff before, so I don't know how long it lasts. Searches say it goes stale quickly. How about if it's unopened?

As I understand it, they got 3 judges for the "competition:" one Belgian, one Brit and an impartial American. I heard the American judge is a drunken idiot.

Yeast and Fermentation / One Week Fermentation = Mistake?

I brewed a batch of 1.050 OG beer a week ago, pitched with S-04 then proceeded to break my hydrometer during clean-up. I don’t know what came over me, but I decided to bottle after a week. There was no airlock activity for at least a couple days, but of course I couldn’t take any gravity readings. Did I make a mistake? I’ve never used 04 before, but I thought I read somewhere that fermentation goes quick, like only a few days.
