Yeast and Fermentation / Re: Trub/break in starters
« on: November 13, 2009, 08:51:38 AM »
I used to save yeast cake w/ trub and pitched w/o washing it and it worked ok.  You just need to realize that a large percentage of the yeast cake (1 quart to a half gallon in my case) is not yeast.

Now I settle out the trub before fermentation and get nice clean yeasties.

I toss mine in the trash since I don't have much of a yard.  I should start saving them for someone else to compost.

Kegging and Bottling / Lagering in bottles?
« on: November 13, 2009, 07:29:46 AM »
Instead of racking a lager to a secondary for cold conditionig, is there any difference if I were to bottle it from the primary and cold condition?  ...other than maybe more sediment in the bottles.

My name is Matt.  I'm 29 and write/admin software/databases for an engineering company.
I have a wife and a couple of youngsters.

I've been brewing for just over two years and have been all grain for just over a year.  I just got a freezer and temp switch that I need to hook up so I can lager!

I'm trying to learn as much as I can about all the different styles.

My favorite color is green but my cooler is blue.

General Homebrew Discussion / Re: Fix tart beer
« on: November 13, 2009, 07:10:24 AM »
Is it acidic?  You may be able to use some Calcium Carbonate to counteract this.  Try it with a pint, and if it works, scale it up.

I've used Potassium Carbonate for Mead.  Never tried Calcium Carbonate other then the mash.  Does Calcium Carbonate not give a chalky flavor?

If it's a clear beer then I'll decant the beer into the glass then swig the bottom from the bottle.

Otherwise, it's probably a 50/50 chance what I'll do.

Beer Recipes / Baltic Porter - All Munich?
« on: November 13, 2009, 06:56:52 AM »
I'm looking into brewing a Baltic Porter sometime this winter.  I notice alot of recipes use Vienna, Munich and Pilsen malt.

Would it no longer be the same style if I sub-ed Munich for the Vienna?
