I used to save yeast cake w/ trub and pitched w/o washing it and it worked ok.  You just need to realize that a large percentage of the yeast cake (1 quart to a half gallon in my case) is not yeast.

Now I settle out the trub before fermentation and get nice clean yeasties.

Instead of racking a lager to a secondary for cold conditionig, is there any difference if I were to bottle it from the primary and cold condition?  ...other than maybe more sediment in the bottles.

My name is Matt.  I'm 29 and write/admin software/databases for an engineering company.
I have a wife and a couple of youngsters.

I've been brewing for just over two years and have been all grain for just over a year.  I just got a freezer and temp switch that I need to hook up so I can lager!

I'm trying to learn as much as I can about all the different styles.

My favorite color is green but my cooler is blue.

Is it acidic?  You may be able to use some Calcium Carbonate to counteract this.  Try it with a pint, and if it works, scale it up.

I've used Potassium Carbonate for Mead.  Never tried Calcium Carbonate other then the mash.  Does Calcium Carbonate not give a chalky flavor?

If it's a clear beer then I'll decant the beer into the glass then swig the bottom from the bottle.

Otherwise, it's probably a 50/50 chance what I'll do.

I'm looking into brewing a Baltic Porter sometime this winter.  I notice alot of recipes use Vienna, Munich and Pilsen malt.

Would it no longer be the same style if I sub-ed Munich for the Vienna?
