General Homebrew Discussion / yeast for tropical foreign export stout
« on: March 14, 2010, 06:38:15 PM »
I judged stouts at the MCAB this year, and had my first good version of a tropical version of the Foreign Export stout. BCS lists London Ale as its yeast choice for this style, but the one I judged had a much nicer fruity ester profile than I remember the London strain having.

Any imput on yeast choice for this "sub" sub-style?

Yeast and Fermentation / Damn WLP001
« on: November 30, 2009, 06:16:26 PM »
I took part of an older yeast cake of WLP001 to make a starter with to brew a 70/-,and this has to be the slowest to flocculate yeast I have ever seen. Over 24 hours to flocculate out in a 35*F fridge, WTF ???  All I can assume is that I took the last jar of yeast I collected from the conical and it is the slower yeast to flocculate >:(

I have been thinking; a while back I bought the tri-clamp blow off set-up for my 14.5 gallon Blichmann conical. After making this purchase I realized that I could either use the blow off tube, or my thermowell to monitor fermentation temps with. I got to thinking today about drilling another hole in the center nof the lid for the thermowell to fit in, and use the existing stopper hole for the blow off tube. Has anyone heard of anyone doing this?

All Grain Brewing / Slowed down my sparge, and got a boost
« on: November 26, 2009, 05:53:36 PM »
I slowed down my sparge on 12 gallons of Belgian Singel, and ended up with 1.058 instead of 1.050. Not a huge increase in efficiency, but a big enough spike to notice it :D

Yeast and Fermentation / Oxygen; too much, or not enough
« on: November 25, 2009, 11:27:25 AM »
Everyone always tells posters to aerate enough. So how much O2 is enough without using too much :?:

Most of the time I use 1 minute of red bottle O2 through a Williams' SS wand set-up for ales, and 2 minutes for lagers/high gravity beers. Is this enough, or not enough, or too much :?:
