Going to do a Pliny the Elder type of DIPA, but with X-369 in place of the Simcoe.

welp, I may be brewing again this weekend since the amber ale I made last weekend may have something wrong with it and become lawn beer.too bad - aside from the pH being low (5.0) initially for about 15min before I corrected it to 5.3, this was an otherwise perfect brew session. Gravity has fallen from 1.055 to 1.010 yesterday and its still going strong- if it gets to <1.007 its a dumper... but the bright side is I get to brew again!
What do you think happened to it? Seems weird it'd ferment that low.
