Me three.  TDS is misleading.  It measures conductivity.  It assumes 2 micromhos = 1mg/L TDS.  Not always a safe assumption.

So if one was to go digital, which one would you get?  Right now, I am happy trying to figure out what little paper strips telling me my water has a PH of 6.2 means in the big picture.  But honestly, until I get quite a few more decent brews in, I won't be all that worried about my water out of the tap as it has worked for me so far.  I do understand that at some point that I will want to educate myself and tinker a bit.

Do a search on Amazon and compare on the web. There's a whole range of prices and models and features. Buy cheaper IMO. Once you go digital you'll forget those litmus strips. ;D

Just another brewing toy I will convince myself to buy!  At least it won't need its own shelf like everything else in the brewing collection does.

Try from $20-50. You don't need a fancy multipurpose meter. And get one you can calibrate with the the screwdriver. I never trusted those that would self-calibrate.

With this one can you just submerge the probe in the mash and leave it there?

Yes you could but the glass probe is quite fragile and it is not recommended. I take a sample of the mash and cool it down to R.T. then take a measurement.

Don't abuse your pH meter by dunking it in hot wort.  I can assure you that they won't last long when used like that.  Cool your wort samples to room temp and your results will be better and the probe will last longer.  Oh, keep the glass probe stored in Storage Solution and that will also extend its life.
