I worked up an IPA to brew tomorrow using Simcoe and Amarillo mixed for flavor and aroma. I love having bulk ingredients on hand!

Said I was going to keg the Schwarzbier.  Decided to let it go another week. Was bored Sunday so I did a partigyle. 7 gallons of Imperial Stout OG 1.110 - 120 min boil. 2nd runnings (capped it with a few more grains) 5 gallons of Foreign Extra Stout OG 1.072 - 90 min boil.  11 hours or shear enjoyment!!!

I brewed a belgian strong golden ale (og 1.074), which is destined to go in a 15 gal. oak barrel with a brewing friends belgian strong dark.

We're off for MLK day (but the wife is not   ), so brewing 12g of all Centennial IPA to celebrate batch 100 (even though its really batch #104  ).

Looking forward to it - am trying TF Halcyon for the first time in this one.  Been growing up some 1450 all week...

UPDATE: what a near perfect day - mid 60s outside, pH, temp, gravity all nailed, chilled to high 50s (without needing my prechiller), backpressure on the airlock within 6-8 hours.

afterward took the dogs around the lake during a red sunset, too bad I left my camera at home.

would have been a perfect day, except for the fact that after carving up up a nice roast chicken, I went to take a leak and wash my hands, came back not 45 seconds later to find half the chicken gone and one sheepish looking lab licking his chops, hiding behind the breakfast table and the other dog ratting him out...

I really don't know.  Either a bitter, APA or IPA.  Or maybe a lager.  I can't decide.

Did a 10 gallon batch of Belgian Dark strong yesterday.  I split the wort into 2 pots and boiled simultaneous.  One got a pinch of star anise, dark candi syrup and I will add pomegranate molasses (homemade) after the intitial ferment slows down a bit.  The other I added tangelo zest and 100% cacao bakers chocolate, homemade candi (dark) and some clear candi syrup .  I plan on infusing it with cacao nibs as it ages as  well.

Made up a huge starter of WLP 530 and split it between the two.  The are fermenting aggressively away as I type.  Only the pomegranate one has blown off.  Something about chocolate seems to keep kraeusen in check.  Both smell great.  I think I may have used too much zest in the tangelo chocolate one... It is wicked orangey smelling.  Maybe should have only zested one tangelo instead of two.  

edit:  never mind, the chocolate only delayed the inevitable.  It has blown twice since I wrote this.  Violently!
