As far as IPA I would suggest you go to Wedge for an American version and Green Man for an British version. Pisgah also has nice APAs and IPAs as well as Belgians. When Asheville Brewing is on the money Shiva IPA is quite tasty. Nantahala isn't is Asheville, but down the road aways, their IPA is quite tasty. You can also find several beers from NC that are distributed in Asheville.
If you are spending a night, get a reservation at The Admiral if you are a foodie. Not very expensive and always awesome. No need to dress up at all. But you MUST have a reservation or you will not get in. They only have Wedge IPA on draft, they may now have two brews.
http://theadmiralnc.com/Not sure of your route, but my norm is to hit Pisgah as I come up the mountain (but I believe you will probably be heading down). Then French Broad to hear some music, but it appears music now starts at 6pm. The I go to Dirty Jacks (Green Man Brewery), then to Wedge and finally to The Admiral.
If you would rather go to bars be sure to go to Thirsty Monk (although they may not have the most local selections), also Mellow Mushroom tends to have a great selection with many locals, Barley's is also a good choice. Sometimes when I am in West Asheville I will go to Westville Pub.
I'm not yet in love with The LAB or with Craggie, but don't let my thoughts deter you. Highland is an awesome choice and they have a tasting room. They have been around for a long time and make solid brews. Oyster House has a stout they brew on a SABCO system, that is the only brew they make at their location, the rest are brewed by French Broad. Thirsty Monk now brews at their South Location, but I haven't had any of that yet.

Catawba down in Morganton is on in Asheville and has solid brews, Olde Hickory is also a great brewery.
