Cascadian Dark Ale recipe?

Hello!

A friend of mine was in USA (I am writing from Europe) and she was trying a kind of beer quite strange for me, called American Style India Black Ale, also knows as Cascadian Dark Ale (CDA), concretly the Hop in the Dark (Deschutes)
She speaks very well about this kind of beer, and I would like to get a recipe (or clone...  ::)) and some tips to brew it.

I have found a couple of recipes, but I would like to compare, investigate and listen to you about the tips and correct method of brewering.

Here, in Europe is not easy to get a kind of beer like this...

I have not made one but as I understand it the recipe is basically an IPA recipe with the addition of some dark roasted malts for color only, the idea being to minimize the roasty bitterness while getting the color.

People do this by cold steeping some roasted grains and adding the steeping liqour to the boil or by adding the dark grains as the end of the mash for all grain brewers.

I think you could also use Sinamar for the dark color without the roast.

Caraffa III will also do the trick.  Some cold steep the dark grains to restrain any roastiness, but any Black IPA I've ever had, had some slight/subdued roast character, I'm gonna brew one soon, I'm just gonna mash the Caraffa with all the other grains.  Stone Sublimely Self Righteous and Stone 15th Anniversary are two good examples.

The best ones I've tried definitely have some roast that balances nicely with big hop bill.

This is a recipe one of the guys in my club has made a few times.  I've had it and it's really good, if you wanna start here:


batch size 5 gallons,,I collect about 7 gallons of wort
11lbs. 8 oz 2 row
8 oz. crystal 75
6 oz. Carafa III
6 oz. Chocolate Malt
 
1 oz Columbus @60 min
1 oz Chinook @15 min
1 oz. Centennial @10 min
1 oz cascade @5 min
1 oz Centennial @flame out
1 oz Cascade Dry hop 7-10 days
 
1 lb. corn sugar last 15 min of boil
Nottingham Yeast ( I use a big starter)
Mash 152* for 60 min.
Mash out 170* for 10 min.
boil 60 min.
 
Est. OG 1.078
Est. FG 1.018  best I have had it finish is 1.022
 
ABV = 7.8%
Color = 29.8 SRM
IBU = 73 + cascade dry hop

Interesting...to me, the dark malt really clashes with the hops in all the ones I've tried.
