DR for 2035
« on: January 26, 2012, 12:43:41 pm »
I'm doing an American light lager. was wondering if I should do a diacetyl rest. Wyeast says optimum fermentation is at 51*f. I am in primary 4 days now at 55 and fermentation just starting to taper off. So, should I do a DR? If so, should I wait till fermentation is complete or raise the temp. now? I have not tasted it yet but judging by the smell of the bubbles I'd say there's still a good bit of diacetyl in the brew.
One other thing: If I were to dry hop, should I do it in the DR, or wait till I lager? Thanks for the help.

I haven't found a diacetyl rest to be necessary with that strain. Then again, I haven't found it to be necessary with any other strain either. Diacetyl or no, you can raise the temperature at this point without worry. I'd keep it <63°F, personally.

Ale or lager, I wait to dry hop until after cold-crashing. You just get more "bang for your buck" that way, without having to worry about the yeast pulling hop oils out of suspension with them.

i haven't used that strain either. i sometimes do a dr but usually i end up just letting the beer ferment on primary for several weeks.  mostly because i get busy.  i haven't noticed a problem.

You should have come by the brewery!

I've only hiked the 20 mi or so closest to Silverton, but there's some great hiking there. Doing the entire Trail is definitely on my bucket list.
