Magnum late
« on: February 07, 2012, 06:37:10 am »
So I am out of nobles in the fridge,
and wondering if anybody has tried to use magnum late in place of late additions of Hallertauer or Mt Hood, or....

I know it is widely boxed into a bittering hop only.
But, I once did a single hop hopburst pale with it,
and it came out quite nice/rather mellow flavor and aroma and I thought it had subtle noble characteristics.

But it has been a long time since that beer, and I am not altogether certain I want to chance that road again.
So, just wondered if anyone has any experience with this nonsense.

Thanks.

i used magnum (homegrown) late in my last christmas beer.  i thought it was very good.  i think people only like to use it for bittering due to the high aa and don't think of it for other uses.  like i said mine is homegrown and after harvest the aroma is awesome.

I have not used it late, but these guys do based on the aroma.

I've tried using Magnum for both flavor and aroma and I'll never do it again.

:), what kind of beer did you use it in and why would you not do it again?

It was an APA.  The flavor was kinda harsh and there was virtually no aroma.

I have read somewhere on the nets that there is a difference in the aroma between Gr. Magnum and Yakima Magnum.  Any wisdom on that?  I have some of each in the freezer, might have to open both of those up when ready for the Dunkel brew day.  Only plan on using the German in the Dunkel.

Dunno, Jeff, that might have something to do with it.  I can't recall which I used.  When I was at SN we only saw Yakima Magnum, so I'm guessing that's what they use in Torpedo.

Good to know Denny...because I was thinking about using some Magnum for flavor additions in an APA. I'll just avoid that idea and use good old American C hops instead.

Ron, keep in mind that it's just a single data point of my own experience.  Obviously, Sierra Nevada has a different take on it.

German Magnum is a little earthy to my opinion.
Fine for bittering.

I wonder if blending it with something else might be key?

Mine are definitely American, and actually Coloradan via Freshops rhizomes; :D
a pound of homegrown in the freezer that smell amazing.

I might try it again.  Thanks for the thoughts.

as i mentioned, mine are homegrown and also via freshops.  incidently on blending,  on one side i grow sterling and on the other i grow santiem.  this last harvest my plants got intermingled and my daughter picked them together.  (magnum are definatley a bigger cone but i did not sort them. i now have them labeled as Saint Donatus's Blend and i used them in my winter beer estimating aa at about 10.  i think it turned out great.
