Melanoidin malt in a Maibock
« on: February 18, 2012, 07:48:46 am »
I plan to brew a Maibock in the next couple weeks with the yeast from a Munich Dunkel.  I wanted to do 75/25 Pils/Munich but I don't have quite enough Munich malt around for that.  I do have some Melanoidin malt but I've never used it.  If I went with about 15% Munich, how much Melanoidin malt should I use?  I was thinking .5 lb in a 6 gallon batch.  Has anyone used this malt in a beer like this and liked it?

I like to keep it under 5% using the Wyermann Melanoidin. The Best Maltz is not quite as strong.
