red ale grain bill help
« on: March 11, 2012, 03:56:25 pm »
Hello all. I am looking for some help with a grain bill for a hoppy red ale. I want something nice and malty to hold up to the hops and am also using this opportunity to use some specialty grains that I haven't tried before. This is my starting point...any input would be greatly appreciated.

5 lbs 2-row
3 lbs maris otter
2 lbs melanoidin malt
2 lbs carared

as for the hops, I'm pretty much raiding the freezer and using what I already have on hand. I was thinking something like this...

1 oz. centennial @ 60 min
.75 oz. centennial @ 30 min
.25 oz. tettnang @ 5 min
.25 oz. saaz @ 5 min

I Use The BJCP Guideliness As A Starting Place.http://www.bjcp.org/2008styles/style09.php#1d. It Wouldent Hurt To Throw In Some Roasted Barley If You Want To Try A Bit More For Style. Looks Like A Fun Brew. Enjoy Yourself!

That is a lot of specialty malt which may not be very fermentable. What FG are you shooting for?

I know it hase nothing to do with an irish red ale but I find munich 10L gives a nice ruby color and great malty flavour without getting to thick and sweet like alot of specialty malts. just a thought.

I'm not seeing this as a hoppy beer.  Looks very malty with just a bit of hop character in the background.  Maybe cut back on the carared and melanoidin and boost the base malts and finishing hops a bit.  Adding a touch of black malt will make up for the difference in color.
