Hey guys,

Sorry for posting a ton of recipes but I am getting a running start into the world of brewing.  I have brewed for the past 5 weeks straight and want to keep it going at this pace as long as possible.  I already have a DFH 90 Minute Clone this coming week followed by a Hoppy Brown Ale, Hoppy Red Ale, and hopefully this IPA if it gets good responses.  So after trying my Summertime Wheat IPA I like the idea of using Honey Malt in this IPA.  I also still have a lot of my Amarillo and Columbus (Tomahawk) hops and then 2oz of Simcoe hops.  Well here is the recipe:


5LB Light/Pale Malt Extract Syrup
3LB Briess Dry Extra Malt Light Extract
8OZ Corn Sugar (Dextrose)
6OZ Gambrinus Honey Malt

boil 60 mins 1.0 Columbus (Tomahawk) pellet 13.1
boil 15 mins 0.75 Amarillo pellet 9.2
boil 15 mins 0.25 Columbus (Tomahawk) pellet 13.1
boil 10 mins 0.75 Amarillo pellet 9.2
boil 10 mins 0.25Columbus (Tomahawk) pellet 13.1
boil 5 mins 0.25 Amarillo pellet 9.2
boil 5 mins 0.25 Columbus (Tomahawk) pellet 13.1
boil 5 mins 0.5 Simcoe pellet   13.0
boil 1 min   0.25 Amarillo pellet 9.2
boil 1 min   0.25 Columbus (Tomahawk) pellet 13.1
boil 1 min   0.5 Simcoe pellet 13.0
post-boil 1 min 0.5 Amarillo pellet 9.2

dry hop 7 days 0.5 Amarillo pellet 9.2

Whirlfloc at 5 Minutes

I will then ferment with Safale US-05.

This will end up being 69.8 IBU's with a OG of 1.067 and FG of 1.018 so 6.5% alcohol.

Being random and looking at your recipe. I have been pondering using honey malt in a hefe. I was in the grain room the other day and ate a pinch of honey malt. Man that stuff is potent.

I believe the honey malt needs mashed so in your case I would leave it out completely. Maybe cut your crystal malt in half as well, extract beers often turn out on the sweet side anyway.

+1 for cutting out the crystal

Your malt extract will give you (IMO) more than enough non-fermentables for an IPA - I used to cut my extract IPAs with some table sugar (although I've found honey is REALLY nice - Bell's does this for Hopslam)

I've seen your other IPA posts - If you're looking for a 90 minute-type hop schedule, a Simcoe/Amarillo/Warrior blend is what does it. Warrior is a great multi-purpose hop (again - IMO).

Great thing about experimenting with IPA - you tend to have a lot on hand at all times!

Alright so concencus is cutting out the Crystal Malt.  I will still be using 6OZ of Honey Malt (Even though it is supposed to mashed)as I like what it did for my last brew so I want to try it in a traditional IPA.  I also wanted to get a little extra color.  I will also add 8OZ of Corn Sugar (Dextrose) as was stated above.  I was just mirroring a Columbus IPA Kit that I got from Morebeer!.  Theres actually had a pound and a half of Crystal Malt.  I just really like the beer so I wanted to use a similar grain bill and change up the hop schedule.  This IPA is actually just a 60 Minute Boil.  I already have my DFH 90 Minute IPA ready to brew this Thursday.  This is going to be a beer down the line.  I agree that it's great experimenting with IPA's as I love to drink them and quite happy I already have a closet full almost ready to drink!! Thanks for the help guys!!

Someone should rig up an automatic fish feeder to dispense hops throughout the boil.

The story about the original batch of the DFH 60 min. IPA was that they used an old electric football game to continuously shake the hops into the kettle.
