I agree with you, I don't like the extract for that very reason. I dont mind fruit beers as long as the fruit is treated like a spice and is subdued. Beer first. Fruit, maybe, if you look for it.

I'm not a big fan of the extracts either, if I'm making a fruit beer I use fruit or possibly juice.

Yeast is stepped up and it looks like we're good to go. Was a little nervous as the pack was 3 yrs old!!!

Long nite. The boys showed up then the power went out. Sucks when you have an electric brewery. Got out the burner, got the water going to do things "the old fashion way". Disconnected the motor from the grain crusher.... then the power came back on! Made for a long nite but she's percolating! Ambient is 70°F and it is rip roaring. Think I'll hold it here for 2-3 days then slowly ramp up. Sound like a plan?

She's tapped. This is a real nice beer. Very popular with my friends and family. It's a fairly dry beer and slightly malty at the same time. Very little apricot flavor. Wasn't worth the expense. I used 2 cans of puree. I'll leave it out next time.
