I have a buddy that works at Ballast Point who gave me about 1oz of Terra Alba (what they use to adjust water similar to gypsum) for changing the water chemistry of water in terms of Calcium and Sulfate. What he didnt include with this product was the amounts of ppm for calcium and sulfate per 1gram/1gallon. Can anyone help me with this?

Terra Alba is a fancy-schmancy name for gypsum - use it as you would with any other calcium sulfate addition.

So my buddy says they use .63 ounces for every 10 gallons to raise the calcium ppm by 163. Is that about the same as 61.5grams per 1 gallon?

0.63 oz / 10 gal = 0.063 oz / gal
0.063 oz = 1.8 g
According to Palmer
, that's 111 ppm Ca.

Doesnt that seem kind of high? It seems alot different then the normal gypsum at 61 ppm, and now it would seem like the sulur would be through the roof

Gypsum contributes 61.5 ppm Ca when used at 1 g/gal. At 1.8 g/gal, like you buddy apparently does, it would add 111 ppm Ca and 265 ppm sulfate (not sulfur).

I think you might a little confused on what Gypsum actually is. Gypsum is nothing more that CaSO4 (Calcium Sulfate). When you add gypsum to beer, you are only adding calcium and sulfate. No sulfur. Don't worry, we will help ya out - nobody outs Baby in the corner!
