Rebrewing my spelt saison. I think I finally have the recipe dialed in to where I want it. It's only been two years in the making.

I probably will not brew this weekend, but midweek I think I will brew the colonial spruce big beer that I spoke of on last weeks edition, and put that on the yeast cake of the 1.045 wheat ale I brew yesterday on the solstice, as sort of a starter.

Monday's my birthday, I'm off from work and brewing up a pseudo-Oktoberfest with Wyeast 2124 at ale temps. Can't wait.

What's your method/recipe? I'm really interested in doing something similar but had my ideas shot down by my buddy who is self-proclaimed lager expert. Is it possible to brew an ale that looks and tastes pretty close to an oktoberfest? I just don't have the ability to lager at the moment.

I've done this successfully.  Recipe is at home right now but it's basically 1/3 Pils, 1/3 Vienna, 1/3 Munich plus a little CaraMunich.  Any Noble type hop.  Ferment with WY1007 at 55F.  Can't really tell it's not a true lager.

I've done a lot of reading on it, and i figured it was worth trying.  I am doing a partial mash with 1 lb Pilsner, 0.5lb caramunich, 2.1 oz aromatic, 2.1 oz Bisciut, and 2.1 oz Carafa III.  1 can Pilsner LME, 1 can Munich LME.  Brings me to about a 1.056 OG.  90 min 3.5 gallon boil, Tettanger at 60 min, Hersbrucker close to the end of the boil (15 min I think?). 

Fermenting with a starter made from 2 smack packs of 2124.  Temp will probably be around 60.  I got lots of extra ice water bottles, and something to actually cover the swamp cooler.

aiming to get a starter ready for an all grain 3 gallon batch of irish porter to brew sunday.  i brewed an extract version of it for st patrick's day.  and taking delivery of my new chest freezer!

Gonna brew my first try at an IPA.  Got my hops in the mail a couple of days ago, and can't wait to try them out!

Brewed 10G of German Pilsner on Saturday and split it up with 2206 and 2124.  Can't wait to compare.

Brewed 10G of Pale Ale on Sunday and split it up Denny's 50 and US-05.  Can't wait for that as well!   ;D

All 20G's are bubbling away nicely.  The Pilsners at 50F and the Ales at 64F.

I brewed up a big Pumpkin Porter. Man was it a PITA of a brewday. But wort is in the fermenter!

No brewing for me either.  Scottish 70 /- bubbling away nicely in primary and Lakefron IBA clone in secondary.  Still on pace for 8 brews (a record for me!) for the year   8)
