tricks to kick into ferm mode
« on: September 27, 2012, 08:19:05 AM »
I have a lager that won't get down to the correct final gravity. I'm using wlp830 lager yeast, starting gravity is 1.065 and it's now only 1.030 after 7 weeks at 53 degrees. This yeast was a second generation lager yeast, I put the new beer right on top of the yeast after I kegged up the previous beer. The first generation wlp830 started at 1.080 and ended at 1.018.

I just raised the temp to 65 for the next 3 days and I'll check the SG later this week.

Is there anything I should do to kick this beer back into ferm mode?

You did give one detail - first generation went from 1.080 to 1.018. By now that yeast could be a little tired.

You could pitch more fresh yeast and see if that does it.  If you don't want to do that, rouse the yeast and see if it does anything.

a little out of the topic...just wondering, how do you rouse the yeast on a 1 BBL SS fermentor without over oxigenating the fermented beer?

thanks!

I'd bubble CO2 through the tank for a few seconds.
Beer is like porn. You can buy it, but it's more fun to make your own.

I have a 14.5 gallon Blichmann, and you can put 2 PSI on the dump valve, then slowly crack the valve open. 1 PSI is probably enough.
