Can't believe how long its been since I have brewed. Squandered the "brewing season" of cold ground water and cool ambient house temperatures, didn't brew since last fall! This may be my first time posting in one of these threads!
I brewed a very simple pils...10lbs of domestic pilsner malt, mashed about 151deg, then a 60 min boil with 3ml of "HopShot". Chilled it to 60 degrees, pitched two packets of S-23, and stuck it in the fermentor fridge at 50 degrees. I know, better noble hops (noble finishing hops, too), a longer boil, better yeast, etc., might have made for a better beer, but I've done it this way before, except with an oz of Saaz for flavor, and liked it. Sadly, no saaz on hand.
Also saw an English ale yeast was expiring, so I dumped it into 5 gal of apple juice. Cider is certainly easy (when you aren't crushing and pressing your own apples).
