Centennial Hops for Arrogant Bastard?
« on: October 25, 2012, 08:49:10 pm »
I've got a lot of Centennial hops vacuum packed in the freezer. The AA is 11.4.

For the last batch of Arrogant Bastard, the recipe called for Chinook, nearly four ounces.

What are your thoughts of Centennial as a replacement for Chinook in Arrogant Bastard? I'd like to use what I have.

I also have a bunch of Cascade and Perle.

I'm looking for "ball park" not direct clone.

Centennial has a similiar flavor but chinook has a harsher bitterness in my experience.

Ballpark, sure. They're both citrusy American-type hops. That said, I don't think Centennial is a great sub for Chinook - especially given how precious Centennial will be for the next couple of years. I'd say Columbus, but it's a little too "dank". Maybe 50/50 Columbus/Cascade?

Centennial won't have that piney taste that Chinook has.  I don't think it'd be a good sub, but you'd still turn out a fine beer, I'm sure.  If you want ballpark, you'll probably be fine using Centennial.  The malt character of Arrogant Bastard will still be there.

You'll still make a fine beer, but the hop character will be rather different. If you use Chinook, Columbus or maybe Nugget for the bittering charge you will be a lot closer. To me, the snappy bitterness is a big part of AB's character.

chinook is a little easier to get right now - I'd buy some chinook, brew the AB clone, AND make another IPA with the centennials - maybe something in the 2 Hearted Ale vein?
