Double decoction

Did a Bavarian heff this weekend with wyeast 3638. Holy cow this yeast is a madman.

Did a double decoction with around 78% efficiency.  This yeast within an hr was already pretty active and within 24 hrs the krausen is easily a foot high...I have 6.5 and 7 gallon carboys and I had to attach a blowoff tube today. I hit it with 60 seconds of pure o2 and made a healthy starter too. Started at 66 and it's jumped a few degrees but im hoping for a nice banana, clove and spice flavor!! Anyways just thought I'd update!

Love that yeast. It gives a nice sweet spice (cinnamon/cardamom/vanilla) phenolic profile that I really like. 66F has given me good results with this strain, but my hefe got up to 68/69ish this summer and I thought it lost a little of the yeast character at the higher temp. I'll probably brew my weizens a bit earlier this year to help keep the temps down.
