Mash 100% Wheat

I want to do a Gratzer (see Zymurgy Nov/Dec 2012 page 37). I always thought Wheat malt (in this case Weyermann Weizenrauchmalz) lacked enough enzymes to get a full conversion. What do you think?

Wheat malt does contain enough diastatic enzymes to convert itself at 100% of the grist.

Basic Brewing did an episode on an all wheat mash a while back.  Worked fine.
What's the worst that could happen?  Beer?

I recently brewed an all wheat beer and it converted just fine. lots of enzymes in wheat malt.

now, the runoff, that's another issue. flow, stuck, stir, flow, stuck... took forever to runoff. should have used rice hulls.

wheat has plenty of enzymes but it has no husks so the grain bed becomes extremely tight making for ungodly stuck mashes, just use hulls and youll be fine
