Whatever yields a nice, high attenuation on your system. On our setup, that is a long rest at 150ish.

You want a dry finish with a sweetish flavor... i.e. some complex dextrins, pilsner-candy-like sweetness combined with a nicely low gravity.

I mashed my last one @ 150F, with a similar grist and used WY3787.  Loved it.

pretty straight forward grist - belgian pils and some caravienne, belgian sugar last 15 minutes of boil, styrian goldings hops for about 22ibu, wlp575.  have 150F target mash temp for 75 minutes, 1.75 qts/lb.

+3 on a low mash temp.  Around 10+% sugar, the rest pilsner malt.  I like WLP 550.
